When you visit Trinidad and Tobago, you quickly learn that the local street food culture revolves around a unique dish called doubles, which cooks begin preparing in the wee hours of the morning! Come with me as I head out at 3 a.m. to a doubles factory and enjoy Trini Indian food in Port of Spain, Trinidad!
My morning began at Cassie’s Creations just outside of Port of Spain for some Indian delicacies. Later, we’d head to Donkee and Audie’s Doubles and Pies down the road.

At Sharida’s Place (now called Cassie’s Creations), I met Chef Sharaz, who would be taking me around. They sell rotis, aloo pies, a vegetable dish called chokas. There, Sharida’s son told me that the place shifted to a grab-and-go spot during the pandemic.
They offered a mix of dishes, including stewed vegetables, sweet potatoes, curried shrimp, fried chicken, stewed beef, chicken liver, gizzards, fried egg and sausage, fried aloo, roasted baingan, bitter gourd, tomato chouka, chicken pies, beef rolls, sada roti, and much more!
I watched them make rotis on a griddle with ghee. They stuffed another flatbread with dal to make dal puri. They also have a flatbread called Buss Up Shut.
Mine contained curried potatoes and curried chicken. They also fried up some doughy fritters called pholourie, which looked like bonda, and prepared some salted cod fish.
We ate right in the kitchen, starting with the pholourie with mango chutney and hot sauce. The hot sauce was nice and the pholourie was soft, fluffy, and spongy, and not very crisp on the outside.
It really absorbed the chutney and tasted really nice. I loved the peppery mango chutney. It was amazing! Combining both sauces blew me away. It was way too good!
Next was the pepper roti, which contains lots of pepper. I loved the flaky layers, as well as the carrots, cheese, and potatoes inside. It was filled with stuffing!
Then, we had a wrapped roti with potatoes and chicken inside. It was massive. You eat it with a red Solo soda. I’m not a soda drinker, but it was nice and refreshing. The cherries in it complemented the thick, heavy roti!
I took the rest to go and then tried a beef pie. It was flaky and herbal, and really delicious. After meeting Sharida (who reminded me not to forget my Solo), Sharaz, my friend David, and I drove to Donkee and Audie’s Doubles and Pies.
After one minute, we arrived and saw the cooks preparing lamb pies and bara (fried flatbread). The bara cooks in oil in just four seconds! Traditional doubles are just bara and chana, but more modern versions add meat and chutneys.
They make bara nonstop from 3am to 7am, place them in coolers, and ship them to vendors throughout the city. We got our pies, bara, chana, and a variety of sauces and chutneys (chadon beni, sweet sauce, mango chutney, roasted pepper).
You take the top bara off and eat. It was spicy and not too oily. The bara was light and airy and the flavors of all the sauces and the chana blew my mind.
The cheese pie also contained carrots. It was like an open, savory empanada with a soft dough. I loved the eggplant pie, which was also doughy because it was flash fried. It was amazing!

As I said before with the exception of Andrew Zimmern and Anthony Bourdain, no one has ever showcased trinbagonian food the way you're doing here. Come back and bring your father next time. Yes I'm still waiting for ma boi mark Weins to make a trip to Trinidad.... Anyways I really enjoyed David's trini food series. He genuinely loved and appreciated Trini food be it chinese or indian. Didn't really see eat Creole dishes though.

Wow love how you are showcasing the foods of Trinbago. I have been watching a lot of others like Mark Weins and Mickey Chen but you are doing a great job with showing the food from the Islands .This brings back a lot of memories for me, when I would get up early with my grandfather to make doubles and channa to sell. Back in those days he used to ride with his bicycle in the village to sell his foods. Thankyou for sharing these local restaurants and dishes! I loves how you say paratha, and dal puri! Dude the country is half Indian who got all that influence from India when they were brought to the island as indentured slaves. That food to me is better than the food made in India [I've also tried that as well] but I'm just biased because I grew up on all those wonderful spices. Please visit, you'll have a blast...
The trinidadians of Indian ancestry sell on the street and restaurants what Biharis eat at home in India. Just rustic homecooked hearty meals. I can see how they evolved so uniquely

I didn’t know there were Indians in Trinidad , shout out to all my Trinidadian Brothers from India 🇮🇳 🇮🇳
The first Indians came to Trinidad as indentured laborers in May 1845. Our culture is a mix of African, Indian, Spanish, French, Syrian, Lebanese - very diverse and it is reflected in our food.
I'm eager to come to India to just eat. Especially the street food.

Chokha is Eastern UP and Bihar delicacy, where eggplant, potato, and tomato are roasted, then mashed, added fresh herbs and some spices, eaten with litty..eaten in winters.....Also Dal Puri and Phulaudi are very typical Eastern UP/Bihar delicacy, prepared during special occasion and festivals... History is that Britishers took labourers from this part of India..... Language, accent everything are lost but our food culture is still surviving even after more than century.
Language is not so lost bhai. Indentured labourers came in 1845 and onward.Hindi, Arabic,urdu is still very much alive in Trinidad and Tobago ;As well as the broken local version known as local bhojpuri over here. A lot of the customs and language has been preserved through religion food music etc. Much love from Trinidad, bhaiyaa.

But we and you also have a responsibility of preserving our native language Bhojpuri...I am hopeful people like you will help in this endeavour.🙏

Our dharma through puja and yagna and Ramayan satsangh festivals etc. allow this .also efforts made by the Indian high Commission as well as other organizations ensure the growth of the hindi language through classes programmes etc. Our hindu schools here also have the Baal Vikaas bihaar which allows for the growth of culture and language as well. All puja and religious functions are performed strictly according to scripture as well.

I just got back from a quick and short visit to my home. I need some more of my homeland. I had a ton load of doubles. The doubles at the Cumoto Juction were incredible.

India is where it started, descendants ended up in the West Indies and out came some amazingly similar but distinct flavours… yummm!
