How to Make Tandoori Lamb Chops at Home

  • In this video Santosh Shah, Executive Chef of Baluchi at Lalit London shows us how to make his Tandoori Lamb Chops at home.
    Recipe
    Tandoori lamb
    Serves 12
    Ingredients
    3 racks of lamb cut into 1 bone chops
    first marination
    1/2 tbsp ginger& garlic paste
    juice of a lemon
    1tsp turmeric powder
    1 tsp salt
    1tbsp vegetable or corn oil
    Method
    Marinate the lamb chops in ginger& garlic paste, lemon juice and salt and keep aside for 20 minutes.
    In the meantime, make the green paste with all the ingredients listed above for the paste.
    In a separate mixing bowl prepare the second marination and fold in the green paste.
    Now add the mixture to the lamb chops.
    with the help of your palm rub the chops evenly so that they are marinated thoroughly and keep it aside for another 15 minutes.
    Place the lamb on a pre-heated barbeque and cook it to taste.
    Alternatively, you could cook them in a preheated oven at 180 ‘C. 6mins for medium rare, 10mins for medium, 14mins for medium well.
    Serve hot with mint chutney and raita.

    I have made these twice now and both times were amazing using local butchers lamb cutlets and cooked on BBQ. I had to watch the video a few times to get recipe properly but this is what I did using the 1st and second marination in case this helps others:-
    1st marination
    In a mixing bowl, add the following and mix:-
    - 1 Tablespoon Ginger paste
    - 1 Tablespoon Garlic paste
    - 1 Tablespoon Lemon juice
    - 1 Tablespoon Oil
    - 1 Tablespoon Chilli powder.
    Place around 6 chops (or cutlets) into this mix and coat well.
    Place in fridge for 2 hours or overnight.
    In meantime, start on....
    2nd marination
    In a mixing bowl, add the following and mix and put aside in fridge for future use:-
    - 1 Tablespoon Ginger paste
    - 1 Tablespoon Garlic paste
    - 1 Tablespoon chili powder
    - 1 Teaspoon turmeric
    - 1 Teaspoon Salt
    - 1 Teaspoon Garam Massala
    - 1 Teaspoon Coriander powder
    -1 Teaspoon Cumin powder
    - 2 Tablespoons Lemon juice
    - 2 Tablespoons Yoghurt
    - 1 Tablespoon of Chilli Oil
    After chops have had hours in the fridge under 1st marination, proceed with 2nd marination and leave again for at least 2 hours in fridge. Cook on BBQ for best results

    Amazing! The spices were just enough or scarcely used so it doesn’t overpower the the flavors of the meat.

    Looks overcooked. Lamb chops should be medium rare. Shouldn't be cooked for more than 3 mins.
