- Hey family!!! In today's video it's Saturday and we're out enjoying the sunshine! I make chicken pot pies for supper and an orange buttermilk cake for our weekend dessert! The cake is coming up in tomorrow's video! 😁🍰
Chicken Pot Pie Recipe:

NOTES: This is the original recipe, I doubled it and made two.

Ingredients:
1 Box Ready Made Pie Crust
1/4 cup unsalted butter
1/3 cup diced onion
2 medium carrots sliced (about 1 cup)
1 stalk celery sliced (about ½ cup)
1/3 cup all-purpose flour
1 1/2 teaspoons minced fresh thyme
1 tablespoon minced fresh Italian parsley
1 teaspoon salt
1/2 teaspoon black pepper
1 3/4 cups chicken broth
1/2 cup heavy cream
3 cups shredded chicken or turkey
1 cup frozen peas
2 cloves garlic minced
Instructions
Preheat oven to 400°F.
To make the filling, heat the butter over medium-high heat in a large skillet. Add the onions, carrots, celery, and garlic and cook until tender, stirring occasionally. Whisk in the flour, salt, black pepper, thyme, parsley, chicken broth, and heavy cream. Whisk until there are no flour lumps and then simmer over medium-low heat for 10 minutes or until sauce has thickened. Stir in the shredded chicken or turkey and frozen peas. Remove from heat.
Place pie crust in the bottom of pie plate and fill with filling. Top with the other pie crust and press along the edges to seal. Cover sides with foil so they don't get too done.
Bake for 45 minutes, or until crust is golden brown. Cool for 10 minutes, cut into slices and serve.
Creamed Corn Recipe:

Ingredients:
4 tbsp unsalted butter
2 tbsp flour
1 cup whole milk
4 cups whole kernel frozen corn
1/2 tsp black pepper
1 tbsp sugar
1/2 tsp salt
Directions:
Melt butter in a saucepan over medium heat.
Stir in flour and cook for about 2-3 mins.
Stir in milk until combined with the flour mixture.
Cook the milk and flour mixture on medium heat until the milk begins to thicken, 5-10 minutes.
Once the milk has thickened then stir in the corn, salt, pepper, and sugar. Stir frequently to prevent burning.
Cover and reduce heat to medium-low. Stir every few minutes. Cook corn for 10 mins, until corn is no longer frozen.
Serve immediately. Refrigerate leftovers.

To pick really hot jalapeños look for the wrinkles on the peppers. The more smooth the pepper the milder , the more wrinkles the hotter they are.

My mom can *never* pass up a good rotisserie chicken! Especially when it's later in the day, when we happen by our local grocer on a Saturday. When it's still hot from there, some apple sauce with it, and just half a chicken each to pick at & eat for her and my dad. They will get it freshly out the oven at the grocer and they will cut it in 4 for you and wrap it up in a special bag that keeps hot until you get it home. They go sit down at the table when back at home & eat it immediately. And that's all you need, basically. Very simple, but good!

Falon, you make your chicken pot pie the exact same way I do from my Better Homes & Gardens cookbook. BUT mine says to add poultry seasoning. And it MAKES IT!! 1/2 TBSP. Try it next time! 👍🏻🥰😁

For those like me that like potatoes in pot pie, I use frozen cubed hash browns (not O'Brien). Faster than cubing and blanching. Also works if you want a quick chicken soup using home canned or bought canned chicken & frozen veg.
Edit I use frozen peas & carrots, just another personal preference

😢😢. Had some bad days and nights so have DEFINITELY missed putting head on pillow with a smile after watching your precious videos. 🤗🤗🤗. Woke up early today to your family and already day looking good cus I’m smiling a lot just watching Manley crow like a rooster. Wouldn’t expect anything less from Titus having his own language to talk to the animals and now teaching his little dude Manley. Him in his jeans 👖 is the cutest ever and he’s running so fast now even can climb the stairs all on his own. He surely has his eye on where everyone is and knows how to call them searching all over. Falon you know what to capture when ya show him and the other kids playing outdoors cus I’m certain every momma and gramma is feeling the same as I am too. Flashback of memories that are all too precious so keep sharing and filling our hearts with joy. When my son was alive nothing got him home faster than momma making chicken pot pie. I swear he could smell it miles away. Rotisserie chicken DOES improve the flavor so why not cheat and spare more pots to SNAP clean later. I loved Bewitched and really wished I had her powers. Wish they’d have more reruns instead of the movie. Falon ya need to plant some thyme even in a big pot cus it just keeps growing all year. Plant with oregano and some sage for some fresh pickings and it will just keep growing. My gram said to have fresh herbs near the door and walkway to house so when people visited they’d get that smell as their leg brushed the plants. Good way to welcome people and they sure will remember their visit if ya give them a cutting too. Well I’m wide awake and will continue to smile now while having my hot tea. Cold coffee with Starbucks creamer later if it gets warmer cus been chilly after few days of almost 100. Too soon for hot summer but it’s coming. Sure keeping the turtle doves cooing cus they too don’t know what the weather will be like just like the poor weatherman and his guessing.
