I'm a few years late, but stumbled on this interview. It was on my bucket list to visit and get a meal by Jack, and a pizza by B. What I loved about Jack was he wasn't too busy to respond to comments on his videos, and had some nice things to say . We even discussed gardening and the weather. Just a genuine guy. His zucchini parm with roasted tomatoes recipe is one of my favorites and I cook that dish often. Thanks for the great interview! Hopefully you got to enjoy some of his cooking on your visit.
I absolutely did. I got a chance to sample his food on several occasions. Best of all sometimes he would have a live blues band play in his restaurant. The last time I saw him was at an outdoor concert in Mystic, Connecticut. He walked the talk with personality and heart. I was as you, very saddened by his passing. I am very lucky I got a chance to meet him.
I was just telling my wife the other day why i love Daddy Jacks videos and at 2:56 min mark he sums it up perfectly even though he never talks about this in his own videos. He shares all these little tips and tricks to making cooking easier/tastier/less wasteful that in all my years of watching all the other top chefs i never saw not once and i had to learn some of which myself slowly. I'm certain these other chefs know this info but just never share it as they all have restaurants and want to keep it a secret.
My dear Mother always said there were no new recipes. My reading her very old cookbooks have demonstrated that. The greatest cooks I have noted always shared their recipes. Julia Child, Jacques Pépin, Nancy Silverton to name a few. Nothing new under the sun. He said he loved people. To me, that is a verity. God bless, my Man!
Daddy Jack was a National Treasure who gave back so much to the community through his food demos. He also was a huge supporter of the Blues and featured many artists at his restaurant. He is sadly missed.
I love Daddy Jack.. and he's spot on with his recommendation of a cold 3 day rise and block yeast... Now i gotta drive 3 hours and get another one of his pizza's...
