Made this last night and it was soooooooo bomb . Thank you! I used Chardonnay and let it bubble until I could no longer smell the alcohol. I added spinach (just for a veggie) more garlic (never too much) and I used a sweet onion that I minced. I served it with blackened Cajun chicken on top and it was DEVOURED!!! this recipe is the BEST

Wow! I just tried this Alfredo sauce with pasta and it is delicious. By far the best Alfredo sauce I found on CZcams. Better than any sauce served in an Italian restaurant. All the best to you. Love your videos.
I have been following this recipe for 5 years and have only strayed twice to have a base of comparison...I have not found a recipe that compares and whenever my daughter comes home it's the first thing she asks me to make, so thanks Joe! Made this last night for Valentine’s Day dinner and, damn! When he says the white wine, egg yolk, and nutmeg can’t be tasted but they heighten the flavors, he’s 100% correct. The sauce I made could easily compete against any restaurant.

I love how he did the fork and spoon. My family isn't Italian, we're Irish, but my mom thought me that. When I was out to dinner with my boyfriend and his family I ordered chicken parmigiana and I showed him how Italians eat pasta. He didn't believe me untill his mom said "yeah, do they do" and called me smart. It's surprising because I know so many people that dont know the fork and spoon technique. Thank you! Having this recipe in my bag of tricks has changed my love life, it's literally my wife's favorite thing for me to cook now. These people can piss and moan about authenticity all they want, but it's delicious and it gets me lots of lovin' every time I cook it.
Suggestion: Never brown the garlic. Put it in after the onion has cooked a bit.
Exactly. Makes it bitter. I would add it with the butter. But I use a garlic press so it's minced. It just melts away and once you add the wine it cooks it thoroughly. But you already knew that. Lol

I’m happy to know that at no point did he ever claim that this is a historically accurate dish. It’s also a family recipe. I will never ever disrespect that. Now having that perspective I say great job this is my first time here btw. He seems personable and his instructions is on point. This fettuccine with cheesy Béchamel sauce looks delicious. Omg!!! I executed this recipe to the "T" and it came out absolutely delicious! Best I've ever experienced!! It was a hit with my house of food snobs. 'Round here you have to come high and go hard... this left them giving lingering compliments, hugs and exclamations of "near tears" and "you nailed it" wafting through the atmosphere, lol. @@bianuccijunior5905 IT ABSOLUTELY IS! Alfredo di Lelio is the creator out of his restaurant in rome in 1914, but his was much more simple than how we make it today, it was just butter and cheese i believe.

worked for an italian chef who would use two cubes of blue cheese instead and simply garnish the fettuccini with parm at the end. Reason being the dish would be lighter due to less cheese but still have a strong cheese flavor.

Hey Joe, I was in Italy when the son of the original Alfredo was still alive in 1964. He and I became such friends that he named one of the dishes in his menu as spagitini Ala Harry which is my name., Your Fetuccini is as good as his. Bravo Senore!

@@cherrymetha3185 You don’t eat baked goods, do you like honey mustard? Lots of things have eggs I mean it depends on what you mean by taste the egg. It's not going to taste like an egg by itself because it's got a bunch of other things with it.

I don’t know how to explain it but sometimes I’ve eaten certain dishes and I can taste the egg in them , even though egg is not the main ingredient .
But in other dishes I can’t ! I love Zabaglione , which is made from egg yolks . I can’t taste the eggs in that but can taste the cognac! Lol!
I guess I don’t like a dish where I can taste the egg ! I know other people who have a similar palate. . My friend won’t eat fresh pasta or even Zabaglione as she finds them too ‘eggy’

The addition of onion, white wine, olive oil, and egg yolk is something I have not seen before. I loved that you explained the pasta. Definitely never add oil to the pasta water, your sauce will never stick. Nice family recipe.

Mr. Joe, this looks amazing. I’m half Thai but I favor more towards Mediterranean cuisines. I really love how you start the base with the olive oil, onion, garlic, nutmeg, wine, salt, and pepper. I made this last year for Christmas and it was a hit! Best fettuccini alfredo my mouth has ever tasted! Making it again tomorrow for one of our Christmas get together as this week and I’m salivating! We add shrimp but it’s phenomenal on its own!

When adding Shrimp to Alfredo I add a little bit of fresh lemon juice it takes it to another level! Just make sure to add it towards the end of cooking.

That was the best version of homemade fettuccine alfredo I've ever eaten. I did make some small preferential changes, such as shallots instead of onion and no eggs. It came out incredible! 10/10

LostInMySpace , ingredients are described in the 1st 1.5 mins. 1 pound dry pasta, 1/4 cup onions, 2 cloves garlic, pinch nutmeg, 2 egg yokes, 1 cup parm/ramano, 1 stick butter.

I suggest you a better "sauce" for pasta.. take a lot of little tomato (they are tastier than the bigger one), a clove of fresh garlic, some leaf of basil (more or less 5-6 leaves) and put all of the ingredients in the mixer.. to obtain a homogeneous "sauce" mix it until as long as you can't tell the ingredients. Otherwise if you want the "sauce" with pieces inside mix a little less. That recipe is perfect for summer dishes because the "sauce" is fresh, not hot.

I made this last night and it was fantastic. I did not have any heavy cream so I used almond milk and cornstarch water to thicken the sauce. I added cooked spinach and broccoli as well. Don't judge. It totally worked for me, lol. I will never buy alfredo sauce again. Thank you! 😃
