    I have not even finished the video and stormed into my kitchen, made 2 omelettes (thin), some cheese, rolled the tortilla with shredded cheese and its air frying right now. The egg wash makes all the difference. NEVER occurred to me. This will be a delicious snack. I did not have Feta. Will buy.

      @@SeriousKeto Honestly it looked fantastic what I pulled out of the air fryer. Having thrown this together with no thought, it lacked taste but this will keep me full until my chicken is thawed for my Lupin Flour Chicken Schnitzel. I need to add lots of taste (salty stuff) to these "eggrolls" but the eggwash makes them look so good.

      Great minds think alike, there's already a whole bunch of crab rangoon egg rolls using tortillas out there. Unfortunately for me the wrapper is too heavy for me to enjoy it.

    Tried the feta egg rolls 5 ways - feta with olive spread, feta with blueberries, feta with diced chipotle, cream cheese with jalapeños, and cream cheese with raspberries. I used the Hero tortillas - they were all great!! Thanks for the inspiration!!

    I only like feta in small quantities, but I'd bet that blueberry one would be fantastic with brie! Another option would be to skip the cheese, and fill it with the "crack slaw" or "egg roll in a bowl" and fry that up. Then it would be like a REAL egg roll!

    For the air fryer nay-sayers, they're arranged differently from a convection oven. Instead of a fan somewhere in the oven to circulate air, air fryers have a large, powerful fan directly behind one of the heating elements blowing that hot air directly at the food. That's how an air fryer actually makes things crispy, and quickly.

      I was that person for a long time. Refused to get air fryer since I had an oven that could do a convection. I snickered at the air fryer crowd. And I am usually all over any new appliance. Then I got one and realized its like a convection oven on steroids. Love my little air fryer now.

    This took me back to my childhood in the 70s when we used to eat cheese blintzes. Some were filled with blueberry as well and we always pan fried them and topped with sour cream.
    Thank you for always experimenting, Steve. I love different combinations of foods.

      I loved cottage cheese blintzes back in the 70s (for me it was the Village Inn Restaurant in Sioux Falls, SD). I always got mine with blueberries. And the sour cream is such a wonderful counterpoint to the blueberries.

      Pork eggroll is low carb ,tortilla skin is where the carb added

    I've used Hero lo-carb tortillas to make various version of this. Love a goat cheese and honey version; one of my faves. Have also done spinach/artichoke dip, pizza, Philly beef steak, beef bulgogi, and other versions. I don't wrap them like an eggroll tho ... I wrap them like a triangular pocket (get 2 servings out of 1 tortilla). In my air fryer, it only takes about 4 minutes to cook. YUM!

      As I told another commenter who has never had feta: Feta is a sheep's milk cheese, so it has a bit of "funkiness" to it if you've not had it before. It's also a pretty salty cheese. For some people, it's a bit of an acquired taste.

    Hubby and I make "Thanksgiving" egg rolls.
    Turkey, keto gravy, 1/2 tsp sweet potato..yes, I know they're not keto. Also, some keto stuffing, sugar free jelly- to simulate cranberry sauce, and roll it up in a tortilla. Normally, we deep fry them in avocado oil, but but your air fryer method looks really cool too

    I've never been much of a feta fan, as it strikes me as very dry and crumbly. I've never thought about heating it. I'll give it a try! Probably with Hero tortillas. That's an adorable little skillet!

      I've found that between 280F and 290F is the perfect temp for that style of omelet. If you have an IR thermometer gun, give it a try.

      I think so, though I'd probably freeze the sliced pieces of cream cheese. I suspect that otherwise, you'll be dealing with some very runny molten cheese.

    Hi Steve. That Japanese omelette pan is really cool. I’ve never seen one before! Your feta egg rolls look amazing. I almost bought some feta yesterday but went with blue cheese instead! Now I wish I bought the feta. Oh well. Next time. My new stove has an air fryer built right into it. I haven’t used it much but I hesitate to buy a countertop version if the oven will work just as well. I’ll have to do some experimenting at some point.     Question: If I used a homemade egg wrap, would I still need to brush it with egg? I don't care for salty feta, but brie with berries would be amazing. Also Havarti melts nicely. Thin apple slices with sharp cheddar? I am all about technique, love to experiment. Thanks!

    love all your videos, and seeing your grandson grow along with you,, i hope you have played around with the dreo and are figuring it out, face book has a really good group if your interested, i really like mine and use it everyday especially for steak and fish, the way it cooks salmon is to perfection, i have not enjoyed a cooking appliance more than this one, i recently purchased the stuffed waffle maker and am looking for ideas especially for the badder, maybe you could do a video on how to use it with some recipes, i saw the one where you put the different kind of cheese in each section so i will try that out first, thanks for all you do to keep us on trac and staying healthy

    This is similar to greek food I love - Tiropita and Spanikopita. Both Feta based in phylo pastry... I would add a touch of Keto honey to the sweet variety and perhaps some chopped walnuts or pistachio.... yummo!

      I did have some keto honey on the one I made the day before. I love how the sweet balances the saltiness of the feta.     I try to avoid low-carb tortillas because I just don't trust the modified starch on low carb.
    However, on my dirty days, I'm absolutely going to do a barbecue pulled pork with jalapeno and a few other ideas.

    I have an idea for the blueberry ones. Use the new ChocZero hot honey with the blueberries. If you haven’t tried it, they make it hot using cinnamon, and it tastes awesome!

      I recently tried the ChocZero hot honey. Having never had non-keto hot honey, I had no frame of reference. The cinnamon was not what I expected for the "hot" and I'm not sure what I think of it.

    Maybe lumpia or turon ingredients. Lumpia is ground meat with vegetables and seasoning, placed in a wrapper and fried. Turon is a plantain banana sliced in half length wise, optionally topped with Jack fruit, placed in a wrapper, and fried. Mom adds a sugary glaze to the outside of her turon but I skip it.

    I’m going to try the egg wash technique with hero tortillas and “crab Rangoon” filling. Gonna use cooked shrimp instead of imitation crab meat and gonna chill or flash freeze the filling so it won’t melt too quickly while tortilla crisps up.

      Authentic feta is made with sheep's milk, which shouldn't affect you if you're lactose intolerant. Costco's feta bricks (not the crumbles) is made with sheep's milk (and freezes beautifully if you can't finish the whole container).

    Family hates feta :( but I have some leftover chayote "apple" pie filling in the freezer. I'll try the egg wash trick, and sprinkle the exterior with granular erythritol and cinnamon! Filling might be too runny, so I might have to thicken it more, or use toothpicks, or use cream cheese...

    Hey Steve,
    Can you please revisit making low carb Chips? Only this time, try to create a Chocolate-Chip of some sort??
    * i just Crave a chocolate treat sometimes, and i also truly miss chips. (The plain ole cottage cheese chip will work in a pinch, but i just imagine you being able to step that up 100X with some chocolate in some way?!?)
