Spinach pies / فطائر سبانخ

Dough recipe:
5 cups flour
2 cups warm water
1/2 cup vegetable oil
2 tbsp sugar
2 tbsp yeast
1 tsp salt
Filling recipe:
400 g fresh spinach
1 large chopped onion
3 tbsp sumac
2 tbsp lemon juice or more if you like it sour
2 tbsp olive oil
1 tsp black pepper
2 tsp salt
