    So last few videos I’ve done have been heavy on the meat, so it’s only fair I cater for our lovely Vegan/Veggie friends too!! This is a simple but delicious stir-fry or bhaji as some will know it as. Shelima (my wife) cooked up some chapatis to go with it but rice or simply on its own is delicious also....!     Ingredients:
    2 medium onions (finely chopped)
    2 medium potatoes
    8 baby corn
    1 hand full mange tout
    1 small to medium Aubergine (Egg Plant)
    6 cherry tomatoes (optional)
    4 green chillies (optional)
    2 cloves garlic (finely chopped)
    1 table spoon tomato purée
    2 table spoon oil
    1 table spoon turmeric
    1 teaspoon salt
    1 teaspoon black pepper
    1 teaspoon panch puran (indian five spice)
