  • Today, I am revisiting an old classic... the mighty Prawn Cocktail!
    At a glance, it’s a simple dish that’s been brutally pigeonholed as being old fashioned. I disagree! It should be a feast to the eyes with crisp, fresh and vibrant ingredients so I’ll show you how to improve the finer details often overlooked that make it go from a soggy fail to a huge hit.
    What starter dishes would you like to see on my channel?
    🧑‍🍳 INGREDIENTS (makes 1 Prawn Cocktail):
    Cocktail Sauce:
    • 150g mayonnaise
    • 60g ketchup
    • ½ tsp sweet paprika
    • 10g fermented red hot sauce
    • 15g creamed horseradish
    • 15g armagnac
    • ½ lemon, juiced
    • 3 cooked prawns, peeled and cut into 1cm chunks
    • 20g salmon roe
    • 1 tbsp fennel fronds, finely chopped
    Salad:
    • 6 leaves baby gem lettuce
    • ½ lemon, juiced
    • 15g extra virgin olive oil
    • pinch of salt
    • 1 avocado, diced into ½cm cubes
    • ¼ bunch chives, thinly sliced
    • 1 lime, zested and juiced
    • salt and white pepper to taste
    Seasoned Prawns:
    • 6 cooked prawns, peeled and kept whole
    • ½ lemon, juiced
    • 15g evoo
    🧑‍🍳 METHOD:
    Whisk together the ingredients for cocktail sauce. In a separate bowl, combine the diced prawns with the salmon roe and fennel fronds. Stir in just enough of the cocktail sauce to coat, reserving the rest for later. Spoon the sauced up prawns into a large coupe glass.
    Dress the baby gem leaves with the lemon, extra virgin olive oil and salt. Combine the guacamole ingredients then place a spoonful into each of the lettuce leaves. Follow this with a spoonful of cocktail sauce. Arranged the lettuce leaves vertically along one side of the coupe.
    Finally, dress your whole prawns with the lemon, olive oil, salt and white pepper, then allow to drain on a board or tray. Arrange your whole seasoned prawns around the rim of the coupe to serve.
