My grandmother used to put a thaali and a weight on top of the fish when it was frying. She said it stops the fish from curling up and not getting evenly browned. It worked for her. 😊 Will try your method today which is simpler.

Hello Aditya! If you watch the whole video, you’ll see that an amount of salt is applied to the fish, and then the fish is set aside. In this resting period the fish meat absorbs the salt. The fish is then rinsed well. This way, the salt does two things: adds taste of course, and also works as an antiseptic. No more salt is needed after rinsing. Been cooking fish in this manner for all my life and no one has complained that salt is lacking. Also, I learned from my mother, who learned from her mother, and so on… We are Goans, so fish has forever been on the menu. On the other hand, I am aware that other cultures adopt a different method of adding fish after washing which is correct for them :) Hope this clears your doubts 😇
