The thing you brought up about Durians, Malaysians and Singaporeans (and to a certain extent Indonesians) prefer the pungent ripe Malaysian durians where they naturally fell off the tree. But here in Thailand people prefer the less pungent, not ripe, freshly picked off the tree custardy ones without the pungency.
It just comes down to preference I think, but for me personally I don't eat either except processed ones. (I really like dried durian chips)

Went to Lao Tang and had 2 portions of duck blood since they banned it in sg. Had very bad food poisoning in the evening and quite sure it was from the duck blood as my gf didn't eat it. Not sure if I'm just unlucky or it's our weak Singaporean stomach which could't take it. Now I know why SG banned it.

I like the noodle in Thailand where it only relies much on a good noodle, fresh lard and Thai fried garlic. The hotplate orh jian is a must everytime I'm in BKK. The orh are always fresh and plump, no foul smell and very generous. The egg, flour, plump beansprout, spring onion, and simple seasoning do justice for the fresh orh. Don't know how they do it🙄. Here can only get 4 orh for small plate and always different sizes.

They are brothers, and the Ruengrit Seafood recipe remain unchanged and only have one place, while Somboon modify the recipe and expand the branch. That Phetchaburi Soi 15 Wanton Mee is a well-known rip-off by now, I can't believe there are still people who recommended this place to you! You can easily find similar or better food at half price or even cheaper elsewhere with better service and shorter waiting time. It's a pity you can't make it for the roadside curry rice stall at Yaowarat, I believe you will like it a lot! Lastly, Somboon is a restaurant leh, not considered street food wor, moreover their pricing are at the higher end. You may wish to try Lek Seafood (next to Chong Nonsi BTS) or T&K Seafood (at Yaowarat itself) next time, both are more affordable than Somboon prices.

Find some ripe durians then you will meet the version you like just like in Malaysia. It’s an old style, old school way of eating durian which most of Thai people dont eat that way. We dont like nearly rotten or a bit bitter durian since it’s way ripe for eating. We collect old ones and left them until they are proper to be eaten (not too much ripe ) .
It’s rose apple not custard apple. We call Chompboo in Thai language. Last 10
Years ago, I had ever been surprised by a group of Indonesian tourist who were excited for Thailand’s rose apple so much. They didnt know this fruit just like you dont. This makes me discover that Malaysia and Indonesia dont have this fruit.
