When I wen to Culinary School (2010) the Japanese Knife that dominated the kitchen was the Glestain 270 Gyuto. Back then it was deepest scallops you could find on knife.
Hi. Love your videos. I have been looking for Japanese knifes. And I have been looking for videos about the different brands. But can’t seem to find anyone. When I start buying knives, I woude want to stay with one brand/maker. So my question is. What brands woude you recommend, and which would you not recommend?
Hey! There are lots of good ones. My favourite is Masashi Yamamoto, he makes amazing stuff. Masakage is also excellent if you want hand forged blades. Ryusen is a good choice for stunning fit and finish, and Haruyuki and Fujimoto knives both offer excellent quality at a lower price point. I hope that helps!
Hey, both are great! The Kurouchi Forged will rust faster and the whole blade can rust, whereas the Nashiji will only rust at the edge, so it's much easier to take care of. It also stays sharp longer, but part of the handle is plastic. If you're okay with the maintenance, I love the look and feel of the Kurouchi Forged!

They're awesome! We've sold them for years and they work great. That said, there's a lot of comparable quality knives for less money from brands like Haruyuki, and higher performing knives for the same amount of money, so it's worth shopping around.
Only non-stainless steel knives rust. There is really good stainless steel knives but they're not gonna be as easy to sharpen and get as sharp as carbon steel. Tradeoff is ofc no rust. something very extreme would be anything made from ZDP-189, which will keep its edge for ages but is a pain to sharpen when you have to.

with carbon steel if you wash it and dry it after every use it will take quite a while to rust. also dont put any of these in the dishwasher
I love the handle on that Tadafusa. I don't think you see a lot of hidden tangs with bolsters on Japanese knives.

I have a tojiro zen 240mm it has laminated vg-10 it works great edge retention is good and it only cost me just under 100eur (not including tax)
