- We challenged chefs of three different skill levels - amateur Onika, home cook Daniel, and professional baker Lani Halliday - founder and owner of Brutus Bakeshop - to make us a sweet and creamy milkshake. Once each level of chef had served up their creation, we asked expert food scientist Rose to explain the choices each made along the way - both good and bad. Level 1: traditional milkshake
Level 2: basically vegan
Level 3: literally everything is handmade
Level 2 isn't even a vegan shake it's just a smoothie with whipped cream lmao
Level 1: done in 10 minutes, including clean up
Level 2: still waiting for a milkshake
Level 3: done in about 5 days (gotta freeze dry those strawberries, go get the LN2, make those sprinkles,....)

in fairness to her, Liquid Nitrogen can be really easy to get depending on location. Over here in the UK, my farmer literally sells them for next to nothing as long as I return the container he gives and I can get it on the day I need it. I think he explained that it's waste product from the farm that he freezes for the extra dough from places that buy a ton

Frankly Onika had more of a "Home Cook" feel with all that budget-conscious choice of ingredients and equipment, just screams "I know what I'm after tonight and I'm gonna make it" mentality. Daniel came across more as the "Amateur Cook" in that they know more of the quirks in cooking but do it as almost a hobby, it's a little extra, would impress in a family meeting. Lani just makes me think of one of the "antagonists" in Food Wars that excelled at food sciences. Knows exactly all the ways to make exquisite gourmet foods (which makes sense given their profession.)

The term amateur is a little problematic, and kinda chef, but try not to take it so seriously. Ik it’s hard and something I’m working on too

Don't say that until you get to taste the milkshake made from scratch, I can tell you, as someone who use to be neighboors with a pastry chef. The store bought ice cream alone is pretty much dog food compared to a real ice cream.

she basically made the same shake as Adam Ragusea. He also used a syrup as a secret ingrediënt
Only problem is how much sugar it has in comparison to other two. Sometimes keeping low budget is counterproductive when you might damage your health and pay for it more later.

@@illusionofquality979 that seems pretty irrelevant since at it's core a milkshake is a pretty unhealthy treat. Like with all desserts as long as you're eating it in moderation and you're getting in proper nutrients elsewhere the extra sugar won't matter in the long run. And if you're not then you're already making poor health choices to begin with so how sugary a particular milkshake is over the other also won't matter in the long run if you have such a poor diet you're downing milkshakes often enough for it to impact you.

In all reality, I think Daniel's "milkshake" is a nice way to go a little easier on the stomach for those of us who can't handle dairy well. Everybody's milkshakes looked so great! I love getting to hear from Rose too! Love you, Epicurious!
As a culinary graduate all I can say is every passionate baker I've ever met is a mad scientist and this video proves my point

Ikr, like I get that if she's a professional she probably makes most the ingredients days in advance and slowly brings them out when the shakes are ordered, but I'm just wondering what she would do if like one day too many where ordered. Like she'd be forced to either stop the shakes and wait 2 whole days, or use Regular ice cream.

Level 3 is a lot of work, but that level isn't for doing at home. Most likely at the bakery or restaurant, all those steps are done days ahead, with only prep being done when someone makes an order.
Lani seems like those really chill ppl who are very humble but also passionate about their work. I love her vibe!

I think Lani made me realize something in me at 14:30. Of course you can't make a milkshake without love, but everyone gets props for that because Lani's milkshake is a labor of love and the lengths she's willing to go to create the perfect milkshake for someone is completely unmatched by the other two.
I have to say. I feel like Rose doesn't get enough love. She does a great job of breaking down the science in understandable ways without talking down to the audience.
Honestly, even though levels 2 and 3 were all healthy and stuff you can't resist the homey feel of a milkshake made with storebought ice cream and Oreos.
Squirt some chocolate syrup/drizzle inside the glass of lv1 milkshake and it would be perfect.
lv 2 and 3 are nice but they miss the trashy feeling i wanna have while eating junk food like this.same with wagyu truffel burgerit tastes probably nice but its not quite what i am looking for

See, when it comes to making milkshakes, when you're a pro chef and a home cook, you're a bit too serious with your methods, but when you're an amateur it's all about having fun and the best part is when it comes out delicious. All these milkshakes look lovely, but there's some kind of love and soul in Onika's that makes it 100x more appeticing.
Level 3 looked the prettiest and, while watching the making, seemed to have the most flavor… naturally. However, it’s hard to resist the chocolate of level 2 or the Oreos of level 1…I’ll have them all, ah thank you.😊🎉

Onika's milkshake is perfect for those who love really sweet sweets + too lazy to do everything from scratch. Its pretty good, I used to make those too and they're bomb.
Daniel's milkshake is more towards the healthier side which really gives his own kick to it. It's more towards someone who wants to make stuff from the start and create something healthier and delicious.
Now Lani's milkshake. Thats some serious effort. Starting everything from scratch and just creating things. It's amazing how there's just a lot of effort into a milkshake.

Yes. Its a smoothie not icecream, nor milkshake. They use it to replace the ice cream for a more healthy version BUT the taste its quite different.
Personaly I find the banana taste too strong to use it as replacement

Is because is not a milkshake it's a smoothie. The task was a milkshake so people are expecting a milkshake not a smoothie. I drink smoothies I don't drink milkshakes but if they give me a task to do a milkshake then I have to do a milkshake or people will be wheres the milkshake?

As much as level 2 intrigues me, level one is the clear winner for me. When you're craving a milkshake, you want it NOW and not have to do too much PT to get it. Level 3 you need to develop your craving at least 2 days ahead of actually enjoying your milkshake. 'Aint nobody got time for that!

I honestly wanna see what the pro chefs make as actually quick comfort food or snacks. If you make a milkshake at home for example, i dont believe they take this huge effort. I wanna see what the pros do as easy but still tasty things or "hacks".
I think I read an interview with professional chefs somewhere, where they basically said that a lot of them are exhausted when they get home, so they eat pretty simple foods.
