If it smelled like one, they probably would. Being nocturnal, I doubt they rely on sight that much and a rubber snake would not pose a threat to them.
Indeed, mice percieve their world mainly through smell, hearing and the touch via their whiskers. Eyes are just for movement and that's about it. Something made of rubber wouldn't even register as snake-like in the vaguest.

I think that the idea could work, possibly add a wire into the body of the snake so it could be wrapped around beams and positioned to fit in places where normal traps would get stuck or won't fit. Maybe a trap attaching to the beams on a farm where mice climb and cross scaffolding.
