How to make white chocolate ganache

  • In this video I will show you how to make white chocolate ganache. For regular chocolate ganache I like mixing dark and milk chocolate so its neither too bitter nor too sweet. Preparation method would be the same for both types of ganache. If you want to use ganache between the cake layers or to pipe cupcakes then I recommend whipping up the ganache to make it fluffy and light. However whipping the ganache shortens its shelf life. Recipes for both ganache are down below.

    RECIPE FOR WHITE CHOCOLATE GANACHE
    Cooking/baking white chocolate 900gm
    Double cream 300ml
    RECIPE FOR REGULAR CHOCOLATE GANACHE
    Cooking/baking dark chocolate 200gm
    Cooking/baking milk chocolate 300gm
    double cream 300ml

    Thanks for sharing this quick and easy way of making ganache.. Can I use any colour gel into the white chocolate ganache?
    Also when can I whipped the ganache?

      You can use gel colour to colour ganache but keep in mind the colours might not come out the same as white ganache has very yellow tone. For instance if you will add blue it will come out as green. You can whip ganache once it’s cool down. But whipping ganache shortens it’s shelf life and whipped ganache needs to be refrigerated and needs to be treated like a fresh dairy cream. Like we can’t leave the fresh cream cake out of the fridge for long. Hope that makes sense. 🙂

    In brown chocolate ganache we just have to replace brown chocolate instead of white or anything else we have to add?
    And if I want mirror glaze plz put video on it too

      Please check the description for brown chocolate ganache. The method will be same but there is a difference in chocolate ratio.

      Ali Hassan no it’s not suitable for drips. You need to use only chocolate for drips.

      Unfortunately you can’t. White chocolate itself is overly sweet. If you lessen the quantity of white chocolate it will mess up the consistency

      Amanda Samadhi I leave it outside so next morning it has perfect consistency to use straight away.

      I would not recommend cup measurements for ganache. Because you need to be very accurate in weight.

    If you use this as a crumb coat, can you use buttercream over it for the decorative/outer layer? How long must the crumb coat be refrigerated before adding the outer layer?

      HotMess yes you can ganache the cake and then you Can add the buttercream layer on top of ganache. I actually did a cake yesterday which was meant to be navy and because navy colour is very strong and colours the mouth blue I didn’t want it to colour all the buttercream so I filled the cake with non coloured buttercream then ganache then I added a thin layer of navy buttercream. After ganache Just refrigerate the cake enough so it sets hard. Hope this helps

      Zane Blane it’s super market brand fresh double cream.

      @@Scrumptiouscakesbyfairy ... thx..but we don't have 'double cream' which is why it helps to see the packaging to compare with..so I have to guess that our equal is heavy whipping cream. Nice work.

      Yes that’s what you need to use heavy whipping cream if you don’t have double cream.
