Canned Onions 3 Different Ways!

- I bet you don't often think of canning onions! But they can be delicious! Learn how to make 3 different kinds of canned onions using BOTH a pressure canner and a water bath canner!
Pressure Canning-
Onions in Water Recipe
pearl onions

Water Bath Canning-
Pearled Onion Jam
4 cups pearl onions
1 1/2 cups sugar
1 1/2 cups balsalmic vinegar
2 tsp salt
2 tsp pepper
Pickled Cocktail Onions
pearl onions
For Brine
3 cups white vinegar
1/2 cup water
1 TBSP salt
1 TBSP pickling spices

I don't think I have ever seen such tiny onions outside of the creamed onions my sister buys frozen. Interesting as always Kirstie.
Yeahhh they were definitely not our best harvest 🤣. We tried a new way of growing them this year and it definitely didn't work out as planned lol. But we didn't want to waste them 😍.

Look for them in little bags. Typically they are sold for stews and pot roasts I believe. Normally I think they are white 😁

I have a LOT of tiny onions, and since I'm relatively new to canning, I wasn't sure what to do with them. While scrolling, I happened to see this video. The onion pearl jam looks delish, and I checked out your other video listings and subscribed. I also have a bunch of tiny red onions, so I hope they can be put in this mix as well.
That would be perfect let us know how it turns out we would love to see it! Yes you can absolutely use red onions just like white onions with the same canning process! 😊
@@kerschnerfarmstead It ended up tasting pretty darned good, but because there were WAAAAY more purple onions than the white, it looked a bit like the La Brea tar pits, instead of deep golden brown caramelly goodness! I'm still working up my nerve to use my pressure canner, so I opted to refrigerate it.

Those both have full instructions including going over the safety check before canning and I also do a little chat in each video about pressure canning and being aware of the process but not being afraid 😁.

Thank you for this video, it is very helpful. I want to try the pressure canning recipe. You mentioned that you use 15 pounds for 40 minutes at your elevation. I am under 1000 feet and would use the same size jars as you (half pint). How much weight would I use? Would the time stay the same? Thanks for your advice.
So the time will stay the same 40 minutes and the weight will be 10 lbs for any elevation between sea level and 1000 ft. I hope this helps!

Yes, that way you don't get anything splashing on the rims after you wipe them 😁.

What is your elevation for water bath canning. We are at 6005 feet and I'm pretty sure I'd need to add time.
Yes ma'am your waterbath canning time for the onion jam and pickled onions will be 25 minutes. As a general rule most recipes are written with the base time for 0-1000ft and then you will add 15 minutes to that time for your elevation. I only add 5 minutes for my elevation. I hope this helps!

Yes you absolutely can!
Could you tell me the model number of your baby canner, presto?
Absolutely it is the presto 01282. That being said it's NOT the new one. The new one you can buy now is only a cooker. Not a cooker/canner combo. The one I have has a copyright of 1998.

At the start, onions that size, can't you pickle them too, they look the ideal size.
One of the ways we mention is pickling 😁 the white one all the way to the left is pickled.
