Ingredients
1 cup Instant Oats (200 gms)
1 cup Rava (Sooji 200)
1 cup curd whisked (100 ml)
1 teaspoon White Urad Dal (Split)
1 tablespoon Oil
1/3 teaspoon Asafetida (hing)
1/3 teaspoon Cumin powder (Jeera)
2 Green Chili , finely chopped
1 inch Ginger, grated
100 gms Carrot grated
100 gms beans finely chopped
1 Onion, finely chopped
15 Curry leaves
1/2 tsp Mustard seeds (Kadugu)
1/4 tsp baking soda
Coriander Leaves (small bunch) , finely chopped
1 tbsp Lemon juice
1 tbsp Salt
½ cup water
Method
In a pan add the oats and dry roasted it on a low flame for 5 to 7 minutes… let it cool for 10 minutes
Then add the oats in a mixer jar and grind it into a fine powder and keep it aside
Add the rava in the same pan and dry roasted it on a low flame for 5 to 7 minutes… let it cool for 10 minutes
In a large bowl add the curd, oats powder and rava
Then add the grated carrot and chopped beans, green chilies.
Mix all together using little amount of water, to idly batter consistency
In a pan heat the oil add mustard, cumin seeds, curry leaves and chopped onions and saute well
Add this to the idly batter and mix well
Add the chopped coriander and mix well
Then add the baking soda and lemon juice to the batter and mix well
Rest the batter for 15 to 30 minutes
Now put a 1 table spoon idli batter into each of the greased idli mould
steam in a steamer for about 13 to 15 minutes or until the idlis are cooked.
Let them Cool and then demould them.
Serve hot with coconut chutney
