It’s like reverse heat cycling. Bourbon doesn’t interact with the barrel below a certain temperature. That cave/cellar they used probably dropped below that temperature many times over the 11/12 years. So what is the true age?

100% correct. The guy who invented gif pronounces it wrong if he says it like "Jif" and he probably doesn't like bourbon.
