ULTIMATE Chocolate Raspberry Cake Recipe! With Raspberry Buttercream & Raspberry Liqueur!

    The ultimate chocolate raspberry cake recipe! If you love chocolate and raspberries, this is definitely the cake for you! The delicate and rich buttermilk chocolate cake layers are dotted with fresh raspberries! Then the cake is filled with more crushed raspberries and frosted with my new ‘Raspberry Buttercream’! This berry frosting is everything! It’s fluffy, fruity and delicious! Garnish this festive and stunning cake with more raspberries for your next special occasion or holiday celebration! It’s a great cake for Valentine’s Day, too!
    INGREDIENTS:
    For Chocolate Raspberry Cake Layers:
    4 large eggs
    1 cup (200 g) white granulated sugar
    1 cup (240 ml) buttermilk
    ¾ cup (180 ml) light cooking oil, such as canola
    1 tsp vanilla extract
    ½ cup (90 g) semi-sweet chocolate chips, melted
    2 cups (250 g) all-purpose flour
    2 tsp (8 g) baking powder
    2 tsp (6 g) baking soda
    ¼ tsp salt
    1/3 cup (33 g) dark cocoa powder
    1 ½ cups (250 g) raspberries, fresh or frozen (thawed)
    For Filling:
    1 ½ cups (250 g) raspberries, fresh or frozen (thawed)
    ¼ cup (60 ml) raspberry liqueur
    Extra raspberries, for garnish
    For Raspberry Buttercream:
    1 cup (125 g) fresh or frozen raspberries
    ¼ cup (50 g) white granulated sugar
    2 cups (454 g) unsalted butter, softened at room temp
    3 cups (360 g) confectioner’s sugar
    Red concentrated gel food coloring, optional
    1 tsp citric acid, optional
    1 tsp raspberry extract, optional

    Hi Tatyana and thank you for another gorgeous cake, I have made a few of your cakes (well three hhh) and I have the same problem every time: how to adapt this recipe to a 9” pan to create the same height?

      I'm so glad you enjoy my recipes! :) 9-inch pans have an increased volume of 25%, so you'll need to make 1 1/4 portions of the recipe. It will be easier to make 1 1/2 portions of my original recipe though, you'll get beautiful layers! :)

      Yes, you can absolutely use my basics chocolate cake for the raspberry cake, too. You can even use the same recipe I have listed, just replace the buttermilk with milk. You can do this for most of my recipes. Enjoy! :)

    Could I take out the cocoa powder to make it a vanilla raspberry cake instead of chocolate? What would I replae it with?

      Sure, you can make this as a vanilla cake instead. Simply omit the cocoa powder, you don't need to replace it with anything. You can replace the melted chocolate with white chocolate, or omit it all together. Enjoy!

    Hey Tatyana, if I wanted to increase the chocolate flavor even more, would it be ok to increase the amount of cocoa powder and chocolate chips, and add some coffee to the recipe?

      Yes! You can add up to 1 cup of semi-sweet chocolate chips and up to 1/2 cup cocoa powder. If you add more cocoa powder, remove 2 tbsp of flour from the recipe.

      @@ianmintz12806 I wouldn't recommend adding more liquid to the recipe, that will change the consistency of the batter. Added instant coffee is the best way to add the coffee flavor without changing the recipe.

    Thank u soo much for this recipe and I wanted to say that in your recipe you use 2 tsp of baking soda and 2 tsp of baking powder, actually I don't like the taste of baking soda so can you plz tell me that how much baking powder will I need if I omit the baking soda

    Can you replace liqueur with extracts?

      You can replace them with simple syrup (1 cup boiling water + 1/3 cup sugar) and add a few teaspoons of extract to the simple syrup! You can also use juice :)

      I have soo many that I love!! :) My Triple Coffee Cheesecake is one of my favorites. I also have a few from my cake cookbook that I love: Strawberry Honey Cake, Chocolate Spartak Cake... Opera cake is another favorite!

    Heyy! I come from Germany, so we use gramm instead of cups. I want to try your recipe, but in your description you wrote different amounts for 1 cup. For example: " 1 cup (200g) granulated sugar" but then a bit further " 1 cup (125g) fresh or frozen raspberries " .
    Is it intentional or was is it a mistake?

      Hi Jasina! No, this is not a mistake. A US customary cup is not a measure of weight but of volume, so every ingredient will convert differently. 1 US cup of sugar will weigh 200 g; 1 cup of raspberries weighs 125g. Hope that makes sense!

      Am keto with pre diabetes and fatty liver so can relate.
      Although I made a sugar free gluten free chocolate cake and ganache the other day so you can still enjoy desserts just a little differently.
