    Learn how to make Patiala Tawa Fish with our Chef Prateek Dhawan.
    Introduction
    Patiala Tawa Fish is a very popular North Indian recipe. In this recipe, the tuna fish is marinated in two stages, where the first stage involves a melange of basic aromatic spices, while in the second one, ingredients like rice flour, chickpea flour and corn flakes crumbs are used. Usually, curd is used as a binding ingredient as it helps to bind all marination ingredients with the fish. The fish pieces are then pan-fried until golden and crumbly. A good marination of the fish before frying makes the dish extremely succulent. This appetizer is an absolute heaven for fish lovers! Do try it today and let us know how you like it.
    Preparation of 1st Stage of Marinade
    Salt (as required)
    2 tbsp Mustard Oil
    1 tbsp Ginger-Garlic Paste

    Preparation of 2nd Stage of Marinade

    1 tbsp Roasted Cumin Seed Powder
    1 tsp Clove Powder
    1 tsp Kashmiri Red Chilli Powder

    Pro Tip. I am from Kokan region of Maharashtra where fish is a steple diet. Instead of adding salt to marinate, apply salt on fish and keep it for an hour. Then wash them clean. This way the salt penetrates the fish. After you are free to apply any marination of your choice. This way the flesh does not feel bland.
    This is how the fish is cooked for generations in the costal region.

    This might be a great recipe but unfortunately this dish is not from Patiala. I can say this bcoz I am from that region, In Patiala & Punjab the most used & preferred fish is “Singhara” & “Malhi”. Along with that the cooking method is either fry or tandoori tikkas.

    • @dhawprateek
      @dhawprateek Před 2 lety

      This is fried fish only but pan fry just used a different technique and yes the most used fish is catfish which we call singhara, carp and rohu mostly freshwater fish but I wanted to try different fish cause these fishes are not available everywhere I tried this recipe in a restaurant in Patiala do try making it you will be amazed
