- You know I love soup, and I love cauliflower, so for me this is a match made in heaven. This delicious vegetarian soup is substantial enough to please most meat eaters; however, you can also add some diced smoked sausage (like kielbasa) or shellfish (shrimp or scallops would be nice). And - we enjoy a visit from my biggest soup fan, my wonderful late mother, Nonna Erminia. This is my favorite thing to eat in the world. A beautiful vegetable only soup. It is so nice that you made soup without chicken broth or vegetable broth that’s already prepared ahead of time. The old recipes did not use a prepared broth for soups and it seems like every soup recipe lately has prepared broth you don’t need it for a beautiful taste thank you so much and I love you and your mama.

I made this today. I didn't use rice so I added a bit of cornstarch near the end, it was too thin without the rice. And I added two whisked eggs for enrichment at the end. Really delicious.

Yes...a woman who knows how to cook a proper soup! There is no way you can get good flavor in 20 or 30 minutes. Soup needs time to meld all those beautiful vegetables and seasonings together. ☺

The recipe online calls for 5 1/2 quarts of water, that’s 22 cups. This seems to be too much for this recipe. Am I wrong?
Surprise! Go directly to the sink filled up the water! Usually use the container (cup or bowl) to fill the water and then pour it into the pot. It's a big action to me. Anyway, if it's tasty, no problem. 😉😋
