Tip for those making dough - always add the salt to the flour, not the yeast mixture. (Salt inhibits the growth of the yeast) Also, always use all the yeast mixture, you can always add a bit more flour if needed.
Like mentioned the over night rise is great.

Cooking in those aluminum pans and in aluminum foil over time will cause altzheimers. I quit using it Years ago because of what it did to my mom. You can get cast iron pans that serve the same purpose they are just a little more work and way safer.

a tip for pizza dough, you have to use 00 flour. It makes all the difference.
