Hi Bea! Thank you for another nice vlog, I follow your channel from London :) It’s great that you made an episode about taking the time to rest and reflect because it is indeed very important to pause and relax to recharge your energy for the busy days.
Nag crave din ako for gimbap last week because of the same show 😅 so I made one but my husband is vegetarian so I made a gimbap that we could share. I cooked some sliced tofu with teriyaki marinade and also roasted some julienned yellow bell peppers in the oven. Then for the gimbap I used brown sushi rice mixed with some liquid sushi seasoning, then i added sliced raw carrots and cucumber, the roasted peppers, the teriyaki tofu and sliced pickled radish (which is the yellow thing that you also added to your gimbap). I put rice up to 2/3 of the seaweed and then after rolling everything - I sealed the seaweed with water. This is a healthy version that was quite yummy - give it a try!
