Braised Pork With Tofu And Egg (Lou Bak / Tau Yu Bak 豆油肉)

  • This is a well-loved classic and everyone has their own version and technique. This is my mother's version of Braised Pork With Tofu And Egg (Lou Bak or Tau Yu Bak, 豆油肉). I learnt this while looking over her shoulder.
    Ingredients:
    200 g pork belly
    200 g pork shoulder (twee bak)
    1 piece firm bean curd (tau-kwa)
    4 hardboiled eggs
    2 Tbsp vegetable oil
    350 ml water (about)
    Spices and Seasoning:
    1 Tbsp sugar
    80 ml light soy sauce
    1 Tbsp caramelized dark soy sauce
    5 cloves of garlic, skin removed
    5 shallots
    1 star anise
    4 cloves
    1 cinnamon stick, about 3 inches
    1/2 tsp 5-spice powder

    Here is my mother's Braised Pork With Tofu And Egg (Lou Bak / Tau Yu Bak 豆油肉) recipe. The caramelization technique used in this video, although not unique, is seldom used by home cooks. It is a great way to add an extra layer of flavour and complexity to the dish.

      I wonder if you can add kicap manis, which is already sweetened and quite complex in its flavour profile - This would add the sweet flavour without having to worry about the sugar burning or being scalded by hot sugar,

      @@lancedesker5673 You can use kicap manis. However, it will change the flavour profile of this dish. Which is not a bad thing if you like kicap manis. 😀

    A bit salty though, I added more water and rock sugar to adjust.

      I'm glad it turned out well. I always try to end my videos with, "taste and adjust for seasoning" - but sometimes I forget.
      I cook for 2 teens who like it salty and 2 80+-year-olds who like it plain. It's a challenge.

    Will the pork shoulder be tender after only 40min? Some other recipes call for simmering at low heat for 3-4 hours…

      It depends on how large the pieces of pork are. I would boil it for longer if I have the luxury of time. But usually I don't. I am a busy .daddy 😄. 40 minutes to an hour would be good enough for me. 😄

    May i know wat is 5 spices powder?

      Five spice powder is a blend of ground spices that's used in Chinese cooking. But it usually contains more than 5 spices. You can buy this in your Asian grocery store or online. Hope this helps 😀

      Yes, you can, if there is a function that allows you to simmer the meat for a longer time 😀
