Smoking a Brisket and tackling some challenges along the way | Brisket on an Offset Smoker

  • In this video, I cover how I typically prep and smoke a brisket. There were some unforeseen challenges which required some deviation from my typical smoking process:
    1) My fire was almost too clean for the first few hours. Even though I was at a steady 250°, my stack was open wider than usual creating more convection causing the flat to curl up at the end and some pooling of rendered fat.
    2) This brisket took a long time to achieve an acceptable bark…I’m not positive what caused this but could have been due to the convection in the smoker for the first few hours. If anyone else has any ideas, let me know!
