      I know right.. Life just isn't complete without an offset.. That brisket was off the freaking chain! I picked that brisket up over the summer last year. I'm always on the look out for the sexy one's and when I see them I just snatch those badgers up.

      Hahaha I know right. The man is just slap full of knowledge and I'm honored to be able to call hime a friend. Hopefully I'll get him over to do another seafood boil with me. I have a boil boss that I haven't used yet and I need to make a video with it.. I tried calling you when me, Jeff and Rus were all together but I guess you was busy.

    Awesome, that brisket was huge! The part that makes this vid and Rus's last couple vids so great is the hanging with friends aspect and this is BBQ but much more! Cheers guys, and don't leave Scott with no cuts from the point! lol, now go get an offset!

    I used to do whole hogs on one side and hams, ribs and shoulders on the other side of an offset when I was younger. Too much moving since to drag the trailer around with me. That brisket makes me want to go make another one and get back to it, though. Stay well, Jaxx! Thank you and Rus for the tips!

      Dang! That must have been one huge smoker huh. Just curious but were you smoking for money, benifits ,a church etc?

      @@JaxxDrinkwater It isn't that big, really. The double is about 10-11' long. Then, we have a single that is about half that and a lot easier to manage.
      We smoked for all those reasons. We mainly started out doing church benefits and our family/neighbor gatherings. Then, it turned into company outings, golf tournaments and the occasional fair. My family back home still do the occasional hog roast for someone in the community, but not often.

      I'm not experienced with off sets but it's all about that fire management. I did learn if you have a great smoker then it's easy. You run into problems when you have a crappy smoker .

    Awesome looking brisket. Your lucky you have a good Costco. Mine only has flats and choice grade. Guess your going to get a offset?

      an offset is on my list of buys. I need to start saving some CZcams pennies. CZcams hates me right now. Views have plummeted over that last 6 months.
