- This episode is devoted to roasting, a straightforward and adaptable technique that also works well for meat, fish, and chicken. Martha’s roast chicken showcases the benefits of this method, with a crisp exterior and moist interior. Because roasting so beautifully concentrates the flavors of the ingredients, it’s also well suited to vegetables, and Martha includes a recipe for a delicious roasted root vegetable salad. Finally, she prepares a show-stopping dish fit for any holiday table: a green peppercorn-crusted roast tenderloin of beef.

*The most satisfying thing is to watch Martha cook. She is a perfectionist, in a good way.*
She's the only one I enjoy watching !!
That’s a good thing😀
She's the best
That’s not the same chicken.
@@FrankGutowski-ls8jtSuch is the reality of television production.
No one can show their love of cooking like Martha.
She pulled out a different chicken. Expertly touched up by a food stylist.
The camera filter used brings me back to old american soap operas like Guiding Light... Anyway, so Relaxing & educational + yummy food..
“Beautiful” ... an adjective Martha uses a lot. I love how she appreciates every ingredient and every step in the cooking and baking process. An excellent to approach to life in general. Martha, you teach us more than exquisite cookery. You also share “beautiful” tips to a joyful life.
I know! Everything with elegance!
I am 81 years young , and have always loved to cook ! I am a Martha Stewart fan ! Martha is my favorite chef, I have learned sooo much from her, Martha explains , she is very excellent at everything she prepares, I love how she always makes ever dish beautiful ! I also like her tone & confident voice ! I wish Martha was my neighbor !

Martha's Cooking School series is excellent. Especially this one. I love to roast so its always nice to get some additional tips and inspiration.
Thank you Martha for being here with us to prepare delicious meals!
Greetings from greece!
Loved the "sad trombone" in the beginning. I have definitely heard that in my kitchen before🤭
165 degrees - dry chicken. 155 degrees - perfect bird. Butter will separate and leave lots of oil in your pan, not many chefs add so much butter to the roasting chicken, instead, they rub it with olive oil, Yammm....
Martha's been a legend since I was a kid in the 90s. Still love her.
I love roasted vegetables and especially on salad too. Great recipes, thank you Martha.
I’ve been looking for a roast chicken receipt so far and this what I love to go with. It looks so crispy and yummy. Thank you Martha for sharing this with us. Happy thanksgiving 🦃 🤗
I love to watch you cook and bake.Everything you fix looks delicious.
Not going to lie, I LOVE learning from Martha Stewart! I LOVE cooking, and as we all know,
we can learn something new every day, BUT some cooks are either too pretentious, and/or
too elaborate in their "ways", but Martha Stewart is just right! *Thank you Team Martha Stewart! :)*
I voted roasting on your survey and Voila !!! Already here!! Thank you, Madame Martha🥰
Use foil on the vegetable roasting pan. Benefits of metal with virtually no clean up! Just be careful when turning the vegetables not to tear the foil (get a good brand, heavy duty foil and it'll be thicker and tear less easily).
Some people like to season their pan for roasting vegetables czcams.com/video/hrufGZsP-jo/video.html
Martha doesn't ever let foil touch her food. Even when she roasts beets she has the foil lined with parchment inside
Martha Stewart's Cooking techniques are always so helpful!
The chicken looks perfect! Crispy on the outside and juicy on the inside! Just the way we like it!!!😉😉😉
Thank you for sharing! 💕
Another fantastic tutorial by Martha, thanks
And this is how you make a roast chicken🤩, I’ve been following her process of roasting for decades, and nothing works like her way. Nothing
Chicken roast can be tricky. I love a roast chicken salad. ❤️
I love roast chicken breast meat in a basic sandwich, just bread and mayo, and roast chicken breast!!!!! YUM!!!! LOL :)
How professional is and neat, clean, perfection 👌
So many amazing ideas! Roasting vegetables with unpeeled garlic cloves, for later squeezing of that milder flavor. Preheating the pan for potatoes! Knowing that the back of the oven is hotter! And on….
I just made the roast chicken Martha shows us here and it was AWESOME!!! And really pretty darn easy. The sauce intimidated me a bit but it turned out to be insanely delicious. Thank you Martha!
Nice veggies Martha. If you want the beets not to colour your hands, simply wash your hands with soap- while they are wet rub oil and handle the beets. When done simply wash your hands - no stains
Just absolutely Divine Martha. Looks do Delicious, keep them coming. I luv Roasted Vegetables. Thank u for sharing.
I love Martha she is and will always be a legend.
Thank you Martha.
Your good martha I can't believe all the food you made just wonderful . Thank u.

Thank you Martha so much
I love the chicken roast salade thank you 👍👍👍👍👍👍👍👍
Martha is the best !🥰🥰🥰
Martha is the first cook that has advised to wash the bird under running water.
You shouldn’t though. Spreads bacteria. Not necessary
Ina washes her chicken as well.
9:31 you can do it on parchment, *if you're lazy* lol I love that
For half a century, I’ve pre-rinsed my fowl in the sink like Martha does, and I’m not changing. Because I’ve seen how terrible large-scale poultry ‘processing’ facilities are, and I know every surface of the chicken I buy in stores is covered with the unsanitized and fecal slurry of the thousand birds before mine. Don’t people know birds in those facilities fall on the floor all the time, and just get thrown back onto the belt? Further, I’ve also always cleaned my prep areas immediately afterward, and for the past 20 years, avoided cross contamination. My mom and grandmother did, too, in their days. None of my or my extended family or friends ever got sick by pre-rinsed birds or cook prep areas. I figure that’s easily more than 800 man years. If I ever knew a factory chicken I was served wasn’t pre-rinsed, I don’t think I’d eat it.
I’m with you 100%.
Love watching Martha! Is there a recipe for the vinaigrette?
Melting the butter and pouring it slowly over makes for more even browning and flavor 😋
Greetings from southcentral Texas USA 🇺🇸: fabulous; thank you; again, thank you

Perfect
Fantastic tips
Perfect roast chicken 🍗
More and more beautiful thank you so much 💖💖
Here in England you are a warned not to wash poultry, but I do and would never cook a bird that hasn’t been before cooking.
Interesting. I am in Canada and I have also read some sources that say not to wash meat.
@@underated17 yes wash away the Sins
I've heard that inthe U.S. too. I guess everyone has there preference. I just pat it with a paper towel just to get off any moisture that it might have accumulated in the packaging. I don't do any extra rinsing. My sink is a lot smaller. Heat from the oven will bacteriabjust fine.
From Uk too! I agree with washing chicken. If you think about it, people cut raw chicken and then they have to wash the knife they used. It defies the whole point of not washing meat because you will still have raw meat water splashing while washing up! They should focus on how people can sanitise their kitchen after handing meat :)
Fantástic !
Martha I'm congratulate you for your Makeup today! Very 👌 nice !!!! BRAVO
Perfection at 80, Martha! Happy Thanksgiving to you and your family, Martha Stewart.
Also, that is the perfect way to cook a beef tenderloin. Absolute perfection from Martha.
A talented woman!!!

Oops! Spelling mistake. You meant to say "occupied Palestine" 🇵🇸

I only use lemon 🍋 with fish
Need to try in chicken it’s the best
Never rinse your chicken under running water.... Come on Martha🙄🤣😏 still love you though!
What’s your logic saying this?
OH MY GOD I REALLY THOUGHT SHE WAS CUTTING A MICE’S TAIL AT 7:35 it scarred me for a hot minute lol
CHICKEN: 450 DEGREE OVEN FOR 50 MINUTES
Yummmmy!
I notice that Martha likes to roast meat at very high temperatures while the consensus seems to be low and slow? Thoughts?
If it’s 5° under the normal temperature to let it rest for 30 minutes I don’t know why she wants to cook it at high temperatures.
what brand of grill pan is that?
thanks for watching
Yum
Nice Rost schicken n meat like itx🙏🙏
Loved the Chicken and vegetables but the meat is to raw for my taste, but I must learn to taste first,I do love medium rare right before fully cooked 😋
TOO NOT TO NOR TWO GRAMMAR POLICE

"U arn't all dat u pretend to be Maaaaaaaaaartttttraaaa!"😂😂😂😂😏
ฺBeauutifulllll!!!!!!!👍👍👍👍
♥️
I've never seen anyone wash a chicken. Is that an American thing?
I have a question, what if you live in a country that doesn’t sell wine or alcohol to deglaze what is the substitute
Stock or broth work well in lieu of wine. I prefer stock as the flavor is more intense.
Vegetable stock
shirls husbands scallop
tarentino strongs gallop

💞💞💞
That’s not enough gravy for me. 😄
You’re like me but with cheese! I love cheese. I put Parmesan cheese on chicken when it’s cooked. I’m not a chicken person.
🥰🤗 Long live you beautiful woman!
👍💯👍💯👍💯
عالی. مرسی. مار تا🇮🇷🇮🇷🇮🇷👏👏👏🌹🌸🌷💚🌺💐
She obviously added a thickening agent to that gravy. It is not just scrapes from the pan and white wine. Why not be transparent?
Don't bother washing the bird as it only spreads germs in your kitchen, just make sure it's cooked thoroughly
I never rinse. just pat dry with papertowel whatever moisture was in it got from it's packaging.
Absolutley right. Never wash chicken. One more thing brush on melted butter 10 minutes before the end of the cooking process otherwise it just burns the skin if you put lumps of butter on the skin. Best to massage with olive oil the chicken prior to putting it in the over. Cook at 190C for around 60 minutes, occasionally basting with the juices. When cooked the juices will be clear, remove and let it rest for at least 15 minutes, cover in kitchen foil, she didn't mention that. She seems like a delightful lady though.
👍🙏🏻
If you like your meat a little more done, I like mine a medium, how long would you cook it or what temperature?

50 minutes at 450 F to roast the chicken ? isn't that way too hot for too long ?
I will always be a pizza eater not a candle light dinner person. Its a oven, I am not saying dont follow the directions if you can get them but all you really need to do is bake at 375 in like 10 min intervals until it starts smoking. I dont cover I baste. Why isnt food like star trek? where I just hit a button and its done.
Always use a meat thermometer as thats the only way you will know for sure its done.
Martha uses salt I love it. I use salt to breath some life into the food. You should use a good salt and give it a few passes.
