      I am 81 years young , and have always loved to cook ! I am a Martha Stewart fan ! Martha is my favorite chef, I have learned sooo much from her, Martha explains , she is very excellent at everything she prepares, I love how she always makes ever dish beautiful ! I also like her tone & confident voice ! I wish Martha was my neighbor !

    165 degrees - dry chicken. 155 degrees - perfect bird. Butter will separate and leave lots of oil in your pan, not many chefs add so much butter to the roasting chicken, instead, they rub it with olive oil, Yammm....

    Not going to lie, I LOVE learning from Martha Stewart! I LOVE cooking, and as we all know,

    Use foil on the vegetable roasting pan. Benefits of metal with virtually no clean up! Just be careful when turning the vegetables not to tear the foil (get a good brand, heavy duty foil and it'll be thicker and tear less easily).

    So many amazing ideas! Roasting vegetables with unpeeled garlic cloves, for later squeezing of that milder flavor. Preheating the pan for potatoes! Knowing that the back of the oven is hotter! And on….

    Nice veggies Martha. If you want the beets not to colour your hands, simply wash your hands with soap- while they are wet rub oil and handle the beets. When done simply wash your hands - no stains

    For half a century, I’ve pre-rinsed my fowl in the sink like Martha does, and I’m not changing. Because I’ve seen how terrible large-scale poultry ‘processing’ facilities are, and I know every surface of the chicken I buy in stores is covered with the unsanitized and fecal slurry of the thousand birds before mine. Don’t people know birds in those facilities fall on the floor all the time, and just get thrown back onto the belt? Further, I’ve also always cleaned my prep areas immediately afterward, and for the past 20 years, avoided cross contamination. My mom and grandmother did, too, in their days. None of my or my extended family or friends ever got sick by pre-rinsed birds or cook prep areas. I figure that’s easily more than 800 man years. If I ever knew a factory chicken I was served wasn’t pre-rinsed, I don’t think I’d eat it.

    Here in England you are a warned not to wash poultry, but I do and would never cook a bird that hasn’t been before cooking.

      I've heard that inthe U.S. too. I guess everyone has there preference. I just pat it with a paper towel just to get off any moisture that it might have accumulated in the packaging. I don't do any extra rinsing. My sink is a lot smaller. Heat from the oven will bacteriabjust fine.

      From Uk too! I agree with washing chicken. If you think about it, people cut raw chicken and then they have to wash the knife they used. It defies the whole point of not washing meat because you will still have raw meat water splashing while washing up! They should focus on how people can sanitise their kitchen after handing meat :)

    She obviously added a thickening agent to that gravy. It is not just scrapes from the pan and white wine. Why not be transparent?

    Don't bother washing the bird as it only spreads germs in your kitchen, just make sure it's cooked thoroughly

      I never rinse. just pat dry with papertowel whatever moisture was in it got from it's packaging.

      Absolutley right. Never wash chicken. One more thing brush on melted butter 10 minutes before the end of the cooking process otherwise it just burns the skin if you put lumps of butter on the skin. Best to massage with olive oil the chicken prior to putting it in the over. Cook at 190C for around 60 minutes, occasionally basting with the juices.When cooked the juices will be clear, remove and let it rest for at least 15 minutes, cover in kitchen foil, she didn't mention that. She seems like a delightful lady though.

    50 minutes at 450 F to roast the chicken ? isn't that way too hot for too long ?

    I will always be a pizza eater not a candle light dinner person. Its a oven, I am not saying dont follow the directions if you can get them but all you really need to do is bake at 375 in like 10 min intervals until it starts smoking. I dont cover I baste. Why isnt food like star trek? where I just hit a button and its done.

      Always use a meat thermometer as thats the only way you will know for sure its done.

      Martha uses salt I love it. I use salt to breath some life into the food. You should use a good salt and give it a few passes.
