    One Can of Chickpeas Will Change how You Think About Mac and Cheese... seriously! This is one of the cheesiest dairy free Mac and cheese recipes I've tried without using any vegan cheese! It goes together super quick and it's loaded with protein!
    I've been trying to find cleaner ways to eat some of my favorite things while keeping them good for my weight loss and this Mac keeps you fuller longer with more fiber and the best part is that it tastes awesome!

    I had tried chickpeas in the past, but I've found butter beans (dried lima beans) are better texture and flavor and no straining needed. I just use soy milk in mine, so not as much fat, but I've also added a little cashew butter. After watching your channel, I do have vegan lactic acid and it's really a game changer for cheeze sauce. 💜 A little something I make now, too, smoked tofu cheeze spread and sauce. 😋🤤

    I made this - with a few changes of course 🙂OMG OMG! Used chickpeas, silken tofu, green olive brine, red pepper paste, lemon juice and nooch. Even my non-vegan grandchildren loved it!

    Please please type the recipe somewhere, it is not on the website page or the video description, and you don't have graphics with the ingredients & quantities.
    I've wanted to make this recipe since this video came out, but I have a hard time hearing everything properly.
    I love the types of food you make, but it makes it so hard when I can't read a recipe anywhere.. Thank you so much for all your hard work

    I'm a vegetarian and I love cheese, but it's really cool to see how quickly some vegan cheese could be whipped up. I might try this just because it would be a nice healthy way to indulge if the taste is anywhere near a real cheese.

    The fart-related commentary made me burst out laughing. The cool thing is the more you eat this way the more your system can break down all the goodness without producing too much gaseous waste. Your channel is one of my favourites. *high-fives*

      Yes, after more than 11 years of being vegan, I don't have problems with gas at all anymore. I did have a period around 2019 where I got back into the "musical fruit" realm, which was after I had my appendix removed and had to take antibiotics. That messed up my gut microbiome for a while I guess, but by now it's all good once more.

      I was going to suggest miso paste as well but I personally prefer the stronger red miso flavor. It gives a great depth of flavor to cheese sauce and it's wonderful in any soup

    Finally made this! Came out so good. I did the first one, but I also added sweet potato. I kinda did it for color, but also because I made it before from a kid's recipe. My meat & potatoes husband loved it! He had low expectations, but this blew him away☺️ Thanks for the food magic!

    great. also if anyone is worried about gas from chickpeas, it does seem to make a huge difference if you peel them. it takes a little work to peel them but it can actually be fun to do, and really only takes a few minutes. its not a case of peeling one by one but putting both hands, all digits in there and some water to roll the peas around and let the skin easily slip off and float to the surface. you need to keep tossing and thumbing the peas for a while til youve got all/most of the skins off but if youre worried about gas, trust me, its worth it, and its actually quite a fun sensation if you arent rushing.

    Walnuts make great Mac and cheese. You can also use just nutritional yeast. I’m gonna try this with cannelini beans.

    Looks great. I’m a huge chick pea lover, anytime I can add it I do, especial rice dishes, it works so well together.
    We did not grow up with Mac and Cheese dishes. Honestly I have no idea why it wasn’t a dish in our home. I rarely make M&C….I going to give this a try though because of the chick peas. Thanks ❤

    I need to try this and compare it to Daiya. I actually bought a box so next time I make regular mac & cheese for my husband and son (who aren't vegan), I wouldn't feel left out, lol. But this sounds delicious, especially the tofu version. And two thumbs up for adding the sun dried tomatoes. I love adding them to any pasta dish.

      This is definitely going to be different than Daiya! But for that white Mac and cheese type of texture and taste this nails it!! The tofu version is my favorite!! Hope you enjoy

      ​​@@emartin851My husband complained once and said my daiya smelled stinky. I said go smell your dairy cheese. He couldn't believe his smelled even stronger lol. Once in a while I use Daiya for both of us. He really can't tell the difference except the melting factor. He just feels bad using mine because it's so expensive & I don't have the luxury of being able to use both. I have been dairy free 18 yrs. due to it making my autoimmune disease act up & causing severe intestines problems very similar to Chron's. Can't have gluten or eggs either. I honestly feel fine without any of it but miss the unfertile eggs from time to time. It does make me feel better not contributing to those industries though so no pain for anyone. Win win!

    I often do very similar -- tofu + a can of beans (any)-- but I add a jar of salsa. It makes a protein-packed dip, but you can easily make it a sauce! The salsa adds enough flavor that you really dont need to add anything else, though I sometimes add nutritional yeast because I'm addicted to it. If I'm feeling lazy, blended tofu/beans can also be added to a jar of pasta sauce to make it extra creamy.
    Another great video! You really do a good job highlighting chickpeas, but I'm just gonna throw this out there -- lima/butter and great northern beans are really underrated. If youre not caring about color, black beans are good, too. Just dont forget the other beans! 😜

    I'm adding loads more of nutritional yeast to mine :D
    Also mustard fits well. Also Garlic + Onion together, a small fresh piece in the size of a finger tip also works well
    I love the tofu chickpea combo tho, have to try it!

    omg that looks so good. I miss chickpeas soo much. I wonder how this would do with my high protein chickpea tofu (would not have the benefit of ease and convenience of just popping open a can of chickpeas though) 🤷‍♀

    I had tried a variation on this some time ago. Nutritional Yeast was involved. I was very surprised how much I enjoyed it! There's that pleasant stodginess that is so comfortating about about mac n cheese. It's not Kraft dinner, which is fine. That a very specific craving. It's also not Adam Ragusea's really cool sodium citrate hack. But this hits the spot.

    What a fabulous recipe and brilliant idea! I made a couple modifications to the first recipe. Just browned some garlic cloves in olive oil, and then added them to the blender with the chickpeas, lemon, milk, salt, pepper, and then added some nooch. Thank you for this video, you guys rock! I'm in heaven with my healthy mac and cheese.

    I checked the recipe on the website and I couldn't find one so here's what I did:
    Chickpeas 1 can
    Tofu silken 1 container
    2 T aquafaba
    1 T olive oil
    ⅓+ C Nutritional yeast (I didn't keep track of how much it but it was a LOT)
    1 T Garlic powder
    5 T Kalamala olive brine (rough estimate since I didn't use a real tablespoon)
    1.25 T pink salt
    My mom and I made a big plate of mac and cheese for each of us and had around half or more of the sauce left over. We plan to make cheesy potatoes, quesadillas, nachoes, more mac and cheese, and to add it to our plant based burgers in the next few weeks. If anyone has any other suggestions please feel free to list 😊

    Looks great! However, avoid the higher saturated fat and chemicals in coconut cream, especially polysorbate 60 (E435), which can harm gut function and increase intestinal permeability. Opt for low-saturated fat plant milks like oat milk. Silken tofu is also a creamy, heart-healthy alternative without additives.

      Silken tofu has been a game changer for me. Cream sauces and cheese has been the hardest for me to give up, plus I'm lazy with a busy life, so was hard to find the time to make the cashew based sauces. Silken tofu straight out of the package and I can have a creamy sauce ready to eat in minutes

    It could be a spread for a sandwich - it could be used for potato au gratin it can be used for a casserole with mushrooms - it can be used as a layer in lasagna.. etc etc etc.. nice work

    I do something like this but add the following for improvements:
    Hummus or blended pail beans.
    Cashew butter for creaminess.
    Soy milk to correct consistancy.
    Nutritional yeast.
    Pail or apple cider vinegar/ sauerkraut juice for the sharpness and acidity of cheese.
    Tahini for the nuttiness of cheese.
    Onion powder r fresh onion for the sweetness and stock flavour.
    Stock cube for umami.
    Cook carrots in the water with the pasta to increase the nice sweetness.

    Brilliant idea, I'd eat it like it is....but my boys love traditional mac n cheese from the box, I think i will try this and cut it w some cheese to make their box mac n cheese healthier. Ideally they'd just eat WFPB, but a mom has to do what a mom has to do...sneak in nutrition and vegetables wherever possible. Thanks! 😄

    What kind of tofu is that? Cant quite make it out on my phone. Is it just normal firm? Ive been using silken tofu and a stick blender plus seasoning for my creamy sauces. Either balsamic vinager for the more pasta base sauces, or lemon juice for sauces i use with burritos etc. Super quick and easy amd just requires a cheap stick blender and a mixing bowl. Cant wait to try this chickpea version though

    Lately my favorite thing is to take dried chickpeas and soak them overnight then cook in the instant pot and freeze them for adding to recipes like curries, salads or ramen noodles. It would be cool to see a recipe for chickpeas that start with dried instead of canned.

      You just use the same quantity of dried, cooked chickpeasaa there is in 1 can (about 1½ cups chickpeas)

      It’s so much more affordable buying dry beans, but like this other person said, just measure them out. A heaped half-cup of dried beans should get you the equivalent of a can when cooked! =D

    This looks so so super delicious. I am going to make it for my man on the weekend. Just one little suggestion. The coconut brand you are using was recently exposed for exploiting monkey slave on their farms. Please look it up. I don't know if you can get the brand Ayam where you live, but the quality is outstanding and they are Peta approved to not use monkeys.

    I have a question though.
    How would you approach it using dride chickpeas?

      Hey!! so I would soak the chickpeas overnight and maybe even give them a little cook, or soak them in hot boiling water first.
      IF you dont cook off the starches while its a bean then when they hit the hot pasta it could get really thick.. just a thought. But thats my best guess!!

    Does the firmness of the tofu matter? I kind of want to try this with the block of smoked tofu i have in my freezer right now 👀 (it's pretty firm, though)
