I tried it, and it was really tasty. I also added garlic and curry leaves. The overnight fermentation process with ACV and tablespoon of jaggery really gives it the perfect taste. Thank you fo this amazing recipe.

Just sun dry crystal salt till it is devoid of moisture add to amla ,put it in a glass jar close it n sun dry it . The moisture will be absorbed in a few days. Add masala as per your choice n the pickle is ready. No need for vinegar at all. At most care should be taken with respect to all the ingredients ( make sure no moisture) .

There is slight difference, how its prepared in south. I mean in Tamil nadu. we do not use Kashmiri Chilli powder, because it only gives the color but not the preferred taste. So we use the other Native chilli powder and also we add 1 tbs of grounded mustard powder. Everything else is exactly the same.

For fermenting, I'm seeing all the videos, and they all say to cover it and submerge Amla and i also like to add garlic in brine and let it sit for 5 days to a week.
Your recipe does not do that for fermentation, so why do you say it has probiotics since it's not formented.
I made it your way, and it tastes great, but I also want it fermented. Can I forment it filled with brine for 5 days and then add the masala in later and let it sit overnight?
