99% of my viewers do *not* know how to temper chocolate, it's *not* an easy thing to accomplish, so from time to time I will just use non-tempered chocolate so viewers know that they can also create what I did on the video. If you have watched most of numerous chocolate videos, you'll notice that I do indeed temper my chocolate, and I have videos on how to do this, both by hand and with chocolate machines. You should use a light colored tray. It’s hard to see the chilled chocolate forms
