Kagawa olive wagyu is sooo good, it makes regular a5 taste boring. Olive wagyu won the best fat quality award for a reason! The flavor and fatty richness i off the charts

Well we all know how that one turned out by now. In all fairness he didn't get the best quality product, it was oxidized to all hell and back. I say we need a definite redo on that one. This time he needs to tell the company it's going to be on CZcams, then they will send the best possible quality.

Guga, I love your channel. You have inspired me to cook some of the best meals I have ever made. I love cooking sous vide, and I am always looking for new ways to use my Anova more, including what I call "Faux-Baked Potatoes" (whole russet potatoes, skin-on, vac-sealed with olive oil, butter, salt, and pepper @195F for 90 minutes). I would love to see you experiment with different types of foods and meals utilizing the sous vide for more than just meat. Thank you for the inspiration, and I'll see ya in the next one!

How long does it take you to sear those two steaks? Wanting tips on searing? Do you keep moving when searing or leave it one one spot and slowly move. Would love to see how you get that perfect sear in regular speed.
there's not really a science behind searing, just use the hottest thing you can find and sear the steak. If it isn't that hot you'll immediately know because it won't get that delicious crust instantly, so maybe you have to hover over the same spot for a little time. But be careful because if it isn't hot enough and you have to leave it under the heat for a little bit a lot of water will evaporate making your steak less juicy. It's really intuitive, but a good rule of thumb is to just use something really hot and hitting it with heat till you have your desired crust. I use a heat gun at 350C° and I just sear it till it looks good. Usually takes about 2-3 minutes, depends on steak size
Greg Haefs this video mentions searing time on chicken with searzall vs heat gun to be about 6 to 7 minutes respectively. Go to about the 8 minute mark on this link and watch for about 1 minute and he tells you the correct searing times on screen.

For the pickeled onion It tastes slightly better if you toast black pepper and coriander then immediately boil your water and vinegars with sugar and bp/coriander not boil water vinegar alone

i feel like picanha or ribeye would be a better choice, while it is the most tender it isn´t as flavourful as either of the steaks i mentioned, and the tenderness of ribeye and picanha can be improved in a much larger scale with dry-aging than fillet mignon as it is already very, very, very, tender

Can you do a video comparing when is the best time to season your meat?
If you buy in bulk and individually package your steaks would it be best to season before packaging and then freeze them so that you can go from freezer to fridge then straight to sous vide?
Then compare it to the way you did it in the video, open bag season then re-bag and let sit over night. And lastly open bag season and re-bag right before going in the sous vide .
Seems like you can save some time and a few $$$ if you don't have to use 2 vacuum bags for every steak and could just be over all more convenient?

Here in México we do pickled onions with habanero pepper and it is delicious but you have to eat it carefully because it heats the things up

I've found that presalting steaks change the texture, making them firmer. This works well for chicken and pork, but I do not like this for beef, especially when looking for tenderness.

when i get my steak,, i also get danish cow fetta, cherry tomato's, rocket and baby spinach and i bbq my steak, make a simple salad of the rest .. put some of the fetta on the steak... i dont use garlic powder though..
Did you try a salt experiment? You mentioned that the salt penetrates the meat better when left for some time. In my experience it also makes it more tender.
Like 0 hours, 12 hours, 24 hours, 48 hours or something like that.
