    The Science of Broccoli...and Other Cruciferous Vegetables is part of a special webinar series A Science Of... that will explore the science behind food. This session features Dr. Trygve Tollefsbol, professor of Biology at UAB.
    The consumption of certain foods, notably vegetables, can contribute significantly to lowering the risk of developing cancer. The cruciferous vegetables, like broccoli, cauliflower, cabbage, Brussel sprouts, and kale, are especially effective in preventing many cancers including breast cancer.
    The amount of consumption and their combination with other food components as well as WHEN in life they are consumed can influence how effective cruciferous vegetables are in preventing cancer. This webinar will provide the basics about cruciferous vegetables and cancer prevention as well as the most recent advances in this exciting field.
    Dr. Tollefsbol is a professor of Biology and senior scientist in the UAB Comprehensive Cancer Center, Center for Health Aging, Nutrition Obesity Research Center, and the Comprehensive Diabetes Center. He is director of the UAB Cell Senescence Culture Facility, which he established in 1999.

    I am looking at the comments here and I think most of the questions (with the exception of the allergy one) are easily answered. Pressure cooking is a healthy form of cooking because the cooking time is greatly reduced... So it's not quite the same as boiling. There are steamer inserts in pressure cookers ... So it cooks (in steam) much quicker too.
    Can you drink broccoli water?
    Of course you can! But would you want to? If broccoli doesn't do you harm...then the water it's boiled in won't either.
    I thought this lecture was excellent... Very informative with plenty of scientific expertise backing up the claims on how cruciferous vegetables (and broccoli in particular) is good for you. Thank you for posting this on you tube so that anyone can benefit from the considerable experience and knowledge of the professor.

    Lightly Stir fry, add some water and cover to boil-steam, barely cooked, still deep green but not raw, and drink the water too!

    Does anyone know if I can reverse a broccoli allergy? I would love to eat broccoli but I immediately start getting a histamine like reaction, itching, throat tightening up, eyes watering, etc. . thanks

    Someone tell him that "juicing" is the "art" of taking a perfectly healthy fruit or vegetable and separating pulp/pectin from the liquid. Pitching the pulp/pectin in the garbage & drinking straight up sugar water! Shameful! In my early days I would juice & after drinking about 16oz, I'd be ready to eat a whole dang meal. People pitch juices to give your "digestive system a rest" Bull or they are trying to sell a juicer. Green Smoothies are the best because they include the whole fruit and vegetable. Highly satiating!
