    The real key here is the sesame seed crust. These little seeds bring a nutty, slightly bitter note that goes well with the soy sauce and butter.     Ingredients
    ▢2 large flat pieces of salmon (Sashimi grade preferred)
    ▢4 tbsp sesame seeds (mixed black and white)
    ▢1 tbsp olive oil
    ▢2 spring onions
    ▢2 tbsp soy sauce
    ▢1 tsp honey
    ▢4 tbsp soft butter
    ▢Half the juice of a lemon
    ▢½ cup dry white wine
    Steps
    1. Remove the salmon skin and dip the salmon piece into the sesame seed mix, one side only.
    2. In a non-stick pan over medium heat, add olive oil. Once oil is hot enough to sizzle place fish crust side down and cook 1 minute. Using a spatula carefully, cook the fish on each side, then flip over. Finish cooking for 2 minutes then set aside on a warm plate.
    3. Wipe pan clean then add white wine, lemon juice, soy sauce, and chopped spring onion (white part) simmer for 2 minutes. Add the honey and freshly cracked pepper and mix well using a wooden spoon. Add the chopped green part of spring onion, and mix well for a few seconds overheat.
    4. Slice salmon into 6 pieces. Arrange separate pieces on a plate.
    5. Add the butter one slice tbsp at a time as you mix with a wooden spoon
    over low heat. Once all butter is melted, (Do not simmer!) spoon sauce over each piece of salmon.
    For the salmon, try and buy the cut towards the tail end which is usually cheaper and flatter. This will give you a faster cook and a larger crust area. The salmon itself should be cooked to perfection, sliced dark pink, or underdone on the inside. This ensures that it is tender and moist, whilst retaining its delicate flavor. By cooking the salmon this way, you can be sure that it will be the highlight of the dish.
