Low Carb Tortillas - 2 Ingredients

Tara’s Tortillas
by Tara Gonzales
1 head cauliflower
2.5 - 3 cups shredded mild cheddar cheese
1 egg white
Process cauliflower in food processor to the texture of rice or grits.
Microwave cauliflower for 10 minutes, covered, stirring half way through.
Squeeze out cauliflower in cheesecloth until liquid is removed.
Add cheese, stir and microwave 1-2 minutes or until cheese is melted.
Stir in beaten egg white.
Spread on parchment in thin rounds about 8” in diameter.
Bake at 400 degrees for 12-15 minutes.
Transfer to a spoon handle or rolling pin to and allow to cool in the shape of a taco shell.
Enjoy!

I know this video is almost 5 years old, but I wanted to let Tara know that her tortilla recipe makes for a great pizza crust too, i just swapped out the cheddar cheese for mozzarella, made it one giant pizza, and spread it a little thicker than was suggested for tortillas. I baked for 10 minutes at 400, flipped it, and baked for another 10 minutes! Delicious!!

Because of you I became a tortilla-addict yesterday and I wanna tell you that I love you for that! I live in switzerland, and of course we have mexican restaurants over here too, but they are not everywhere around the corner and also mostly not overly authentic. So I was all my life like "Tortilla? Nahh!" But now, and for ever, I will LOVE tortillas! THANK YOU SO MUCH WES!
Here is how I did it: My daughter is egg sensitive so I made Tara's Tortillas, but without the eggwhite. To make it even more tantalizing, I added parts of Ketoconnect's seasoning. I used half Cheddar and half Raclette cheese for the perfect melting behaviour (did I mention that I'm swiss?). First I drained the raw cauliflowers with my slow juicer, as somebody suggested in the comments, what was perfect. As I have no microwave (again, swiss....) I dried/cooked the cauliflower in a wide skillet, seasoned, added the cheese, let it melt and then spread on the parchment paper. The batch was perfect! Baked as Tara suggests. Peeeerfect results! I hardly ever tried a keto recipe from the crazy internet that worked so well! No fallin' apart, no crumbling, just gorgeous, soft-crunchy tortilla shells.
This, my dear american friends, will be my new bread. I will even try to freeze it (after spreading into form, before baking).
The only thing I will do differently next time is to spread all of the mixture on as many pieces of parchment paper as needed, even if I can only bake them one portion after another. This because I experienced, that the cauli-cheese mixture will not return into that berfect spreadable batch from the first round, even if you gently heat it up again (at least not if you have to do it in a skillet or pan. Maybe a microwave would provide different results). So line them all out in the first go and bake one after another.

Yay for you! I love authentic Mexican food!! I hear the European mex restaurants are not so authentic, but I guess we're spoiled here in Colorado. We have many Mexican immigrants and restaurants opened by them. I'm a so-so Mexican cook, but I try to be better!

try out whole potato smeered with oil on clean skin and the rubbed in coarse salt. put in airfryer for about 45 min if big until your knife slides in easy

What a fun video! A tip (like you, I learned the hard way): for the shaped taco shells, cut your parchment into one square for each one, draw a circle on the back, then when ready to shape, pick up the paper and drape the whole thing over a ruler (or a yardstick when making several) to cool. Peel off parchment and voila!: you have a flat-bottomed shell which stands up while you fill it. Love ALL your videos, Wes, and this one was particularly enjoyable. Thank you!

I realize this is from 2018, so you’ve probably figured it out by now, but if you take a bit of foil and mold it over the ends of the roll and the bottles, you can get the roll to be stable while you drape your tacos 🌮. Thanks for all you testing, it makes it so much easier to achieve my keto goals to know the trials you have made and your reasons for liking one recipe over another. Ty ty ty

tip: I discovered that the easiest and fastest way to drain the cauliflower is to use a juicer. We just pour the juice and use the dry matter that has been left.

At first I thought whaaatt??? Then yeah it makes perfect sense, all the "pulp" will come out the other side and you have yourself dry cauliflower or "fail-broccoli," whatever you call it :-)

32:57 Gordita’s absolutely are a real thing in Mexico! They’re essentially a regular tortilla with extra ingredients (chicharrone, beans etc) incorporated INTO the dough.
Love the soft shell suggestions for making enchiladas, especially the one with cauliflower. I love enchiladas but haven’t had them since starting keto. Now I have something to work with. Thank!

Want to make the Keto Connect shells over the top? :D Just make the "tortillas", then in the same hot pan, place approx 1/4 cup of shredded colby pepper jack cheese - as if you were going to make a cheese "tortilla" - , then place the KC tortilla on the cheese & cook until the cheese is crispy. You can then lay it over your dowel or an oven rack to cool. YUM!

I've made @ketoconnect tortillas and they are so good! WhenI make "hard" shells I mix 1 cup shredded cheddar with 2 tbsp almond flour and 1 tbsp melted butter and bake them like you are baking the shredded cheddar.

Love the video. Just FYI those bags of pre shredded cheese have a potato starch coating to keep the shreds from sticking together. It's convenient but you have to account for the carbs. I grate my own cheese it tastes better anyway. I will say that the more you can get them to brown up the more the resemble real tortillas if you don't they can be kinda eggy....

Great video! I love the recipe comparisons. Tip: We use a dedicated 100% cotton tea-towel and a tortilla press to squeeze the water out of our cauliflower rice. You don't have to wait for it to cool and it really dries things out nicely. Plus the clean-up is easier than pulling out the juicer. ;-)

I didn't realise the difference it makes using a cast iron skillet as opposed to a non stick pan - sure explains some of the issues I've had trying to make stuff in the past! When you cool and shape the tortillas, use two spouted liquid measuring cups to hold the dowel in place. These look so good. Hearing that Taco Bell is available through GrubHub has triggered my cravings so I am super grateful to find this alternative. I am going to make them this week.
