    Hyderabad is famous for its legendary Biryani and the eclectic mix of non vegetarian offerings that includes some of the best meat dishes from the erstwhile royal kitchens. But in recent times, a fantastic Arabic variation of this majestic dish that has been hogging the attention of the rice and meat lovers in and around the city, is the Yemeni delicacy Mandi.
    The unique thing about this dish is that here the flavoursome meat stock is used for cooking the rice. The separately cooked meat is served on the the top of the rice. The dish was introduced to the masses here, by the Arab people residing in the Barakas neighbourhood of the old city and since then it has become quite a sensation in the food circle all over Hyderabad. So in this episode let’s explore the Mandi and find out how it looks and tastes and is prepared.
    Mandi is traditionally served in a community style where a group of people share the dish from a single huge Thali. Hence the blissful experience is heightened not just by the yummy spread but also by the pleasant connection that happens over it.
    Sankalp Bhai took us to the Yum Yum Tree restaurant to taste the most scrumptious Mandi. The ambience was similar to the traditional Arabian setting where meal is served on low tools and people sit around it, on the floor to relish the food. We meet chef Ahmed who explained to us how Mandi is prepared and served. The cooking style is very different from other rice and meat dishes.
    After this informative conversation we sat down to try this fantastic Yemeni dish. The huge thali had a neat bed of the aromatic and flavourful Mandi rice. It was topped with curried mutton pieces, a roasted chicken leg and a deep fried fish fillet. The garnish of fried onions and nuts ,sliced cucumber and fresh coriander made it more appetising. The thali also had three tasty accompaniments-chicken curry, salan and a thin spicy tomato chutnety. It was flavourful, delicious, rich and light on the palate, fragrant and satisfying. The enormous portion can easily feed three to four people.
    Then came the dessert platter where there was this traditional middle eastern semolina cake Basbousa and the super innovative oreo paan. We finished the feast with a cup of hot and ambrosial Sulemani chai. Getting introduced to this impressive Arabian delicacy was a fine experience. If you are a meat lover and happens to be in town then do try this unique dish and experience its amazing taste.     India's Hyderabad is a city of diverse cultures. The kitchen has the soul of the cook. The taste of the ingredients is the same as that of the chicken and mutton served in a large plate. The dessert with coconut is great. I will surely meet with Chai. It was a feast, God.

    Best mandi you find in Hyderabad is Al-nadi in barkas is one of the best mandi spot in hyderabad....trust me one person will eat 1nd half full mandi alone becoz of taste and flavour they provide

    Dear Anubhav,
    I am Nabeen and from Pakistan and your big time admirer. You are doing great job, I have a suggestion don't take it as a criticism but when you plan for a food tour please do some homework if the food is not from origin. The chef who was proudly telling you about his recipe and method of mandi belive me he don't know anything about mandi. Like Biryani there are many types of biryani same as there are many types and methods of mandi but it was not even near to any kind of mandi. Trust me on that because from last 15 years I am in GCC countries

    Thanks for sharing the thoughts...I wish the cook could have shared all the spices in mutton gravy...The custom of two people eating with all the side dishes...makes the food intriguing.. Many of the traditional Middle Eastern homes eat this way..interesting issues of cultures..textures...tastes.and all that goes to it interesting. As a food blogger even in some of the cultures of south India...during weddings the food served to the groom and bride are on large silver plates with foods of the favorites they like...half dozen or more very lovely bowls...are later gifted to the bride...amazing how we can travel the world thru the food we eat.

    It is similar to Delhi's Mutton pulav as this preparation is very common here. Remember using this very old technique taught by my grandmother way back in 90's to us. We used to boil mutton separately and then make pulav in stock and add mutton on top of it. I believe they have steel my grandma's receipe. The taste is subtle and very bland in nature usually in this preparation, however with changing time and preferences meat has become more spicy with full use of whole spices, cloves, caradamom black & small, cummin etc. To balance the spicy taste we used to prepare a Lal chuntey with it ,made of very simple ingredients e.g. garlic, green chillies & 🍅 grind on rock stone or silbatta. Silbatta with optimum grind keeps the green chillies and garlic raw essence active in chutney to give tangyness. Mirchi ka salan later added more twist to Biryani especially. But the Mandi or usually called khabsa halam in Hyderabad remained to be eaten with tomato chutney widely and very light on stomach as well. Would recommend you to visit Four seasons in Jubilee hills to try this popular item in their N. Veg Buffet comprising this very authentic dish.
