The most important thing to recognize is that the NC food code is meant to protect consumers in North Carolina, so it specifically regulates SALES as opposed to collection. You are free to collect and eat your own mushrooms without any regard to the regulations, but as soon as you participate in the regulated food industry by selling mushrooms you become subject to NC regulations.
