Ingredientes para realizar la base de galletas: 2 paquetes de galletas tipo Maria, Digestive, oceanix … etc ( según queramos el grosor de la base emplearemos mas galletas o menos) 100 gr. de mantequilla (temperatura ambiente) 1 paquete de cacahuetes con miel (podéis echarle cualquier tipo de fruto seco) Ingredientes para el relleno de la tarta de queso: 400 gr. de nata liquida para montar 35% materia grasa 100 gr. de azúcar 2 sobres de cuajada 500 gr de queso de untar (estilo Queso Philadelphia) Mermelada: casera (sigue leyendo que explico como se hace) o bote de Confitura de fresas ¿Que son los sobres de cuajada? Son un preparado en forma deshidrata, en polvos que sirven para hacer cuajada o mas bien un postre lácteo similar a la cuajada solo con añadir a leche caliente. Los que yo compro se comercializa en un paquete que contiene 16 sobres de 12gr cada uno. Para la receta de la tarta de queso solo vamos a usar 2 sobres de 12gr osea 25gr de cuajada en polvo.  Raciones que salen de esta tarta de queso Los ingredientes usados en esta receta son ingredientes que puedes encontrar en cualquier súper fácilmente, son para unas 8/10 porciones de tarta molde de 20 cm de diámetro, para un molde de 26 cm, pueden salir de 10/12 raciones. COMO PREPARAR LA RECETA DE LA TARTA DE QUESO Empezamos por la base, continuaremos con el relleno para la tarta y vamos a seguir con la cobertura de mermelada que podrá ser casera o de bote.  PARA LA BASE DE GALLETAS: 1. Trocearemos las galletas en pequeñas porciones para triturar en el robot de cocina con la trituradora eléctrica, hasta hacerlas polvo , una vez picadas mezclaremos con la mantequilla y los cacahuetes de miel previamente troceados. Formaremos una masa que nos sirva como base para la tarta de queso fría. 2. Si queremos sacar la tarta por completo del molde, colocaremos un papel del hornear en la base del mismo tamaño que la base recortaremos con unas tijeras. Colocaremos la masa creada con las galletas y la mantequilla en la base del molde, cubriendo toda la base de forma homogénea, nos ayudaremos de una espátula de silicona o con la palma de la mano y los dedos iremos cubriendo toda la base del molde. Yo emplee otra base mas pequeña para aplastar bien la base y que quedara del todo nivelada. 3. Dejaremos enfriar en la nevera hasta que este lo suficientemente resistente como para soportar el peso de nuestra tarta de queso. Unos 15/20 minutos serán suficientes para conseguir una base estable y firme. PARA EL RELLENO DE LA TARTA DE QUESO: Os voy a explicar como preparar el relleno de la tarta: 1. Calentaremos la nata en un cazo a fuego lento, iremos incorporando el azúcar y removeremos con la nata, mezclaremos con el queso, incorporar las cuajadas, que habremos diluido en un poco de leche. Aconsejo seguir las recomendaciones del fabricante para diluir las cuajadas. 2. Remover todos los ingredientes hasta su completa disolución, en el momento que la mezcla comience a hervir (es importante que la cuajada rompa a hervir, ya que si no lo hace, es posible que la tarta no cuaje) apartar inmediatamente para que no se pegue, el calor excesivo puede llegar a quemar la mezcla y dejar un sabor a quemado que la estropearía por completo. 3. Una vez conseguida la mezcla para la tarta de queso fría, la echaremos en el molde que tenemos ya preparado con la base de galleta. Dejaremos enfriar en la nevera unas 6 horas aproximadamente y una vez cuajada la tarta de queso fría decoraremos la superficie de la tarta con nuestra cobertura preferida en este caso, mermelada de fresa. 4. Des- moldar la tarta una vez que hayamos decorado la superficie y ya estará lista para servir. COMO PREPARAR LA TARTA DE QUESO SIN CUAJADA Desde hace algún tiempo me preguntáis ¿que es la cuajada y en donde podéis comprarla? ¿Por que otro ingrediente podéis sustituirla? Por suerte tenemos muchos lectores de México, Argentina, Chile y otros países latinoamericanos donde la cuajada como tal, como la comercializan aquí en España en formato soluble no existe. Por eso os voy a explicar una alternativa a la cuajada, se llama gelatina neutra o grenetina tanto en obleas como en polvo es la manera más aconsejable y práctica para conseguir que nuestra tarta de queso llegue a cuajarse sin problemas. INGREDIENTES PARA LA TARTA SI NO USAMOS CUAJADA: Emplearemos o láminas de gelatina o gelatina en polvo, una de las dos. 8 hojas de gelatina 15 gr de gelatina en polvo Preparación: ¡¡ Os aconsejo leer siempre las indicaciones del fabricante en cada caso, ya que dependiendo del gelificante o la gelatina que empleéis vendrá con las indicaciones a seguir mas apropiadas y es la mejor manera de actuar para lograr que nuestra receta sea todo un éxito!! 1. La gelatina en este caso se diluye sola por el calor, removeremos muy bien todos los ingredientes hasta su completa disolución una vez que la tarta se enfría la gelatina o grenetina cuaja la mezcla y solidifica nuestra tarta. 3. Cuando ya tenemos lista la mezcla, la echaremos encima de la base de galletas que teníamos reservada. Dejaremos enfriar en la nevera para que la mezcla se cuaje o solidifique como mínimo unas 6 horas. Transcurrido este tiempo podemos adornar nuestra tarta con la cobertura deseada , mermelada de frutos rojos , de fresa, de naranja etc.. ya podemos des -moldar nos quedara una tarta estupenda que podemos degustar a cualquier hora.
