Great video and lovely cooking! BTW! The story of St Peters Fish is actually the story of Peter not being able to pay his temple taxes. Jesus told him to go fish in the sea of Galilee and catch a fish, he did and hey, it had a sheckel coin in its mouth and he was able to pay his taxes, but left a thumb print on the fish. That fish was probably the same indigenous tilapia that fed the 5000 in a different gospel story. I lived and worked in Israel back in the day and had a job fish farming carp, St Peters Fish tilapia with the spot were a common bi catch and tasted better. They have been virtually fished out now, other species of tilapia have been put in the Galilee that dont seem to have that spot! I am sure there are other fish given the same St Peters name along with John Dory.

Thanks for another cracking (2-part) Catch & Cook. JD's been one of my favourite fish ever since I was a young marine biology student and was given one to 'dissect and describe' in a practical exam. Bit of a gift really cos they're so well adapted to their ambush-predator lifestyle. Never caught one myself, though I've cooked and eaten plenty, especially in Brittany, where they often appear on the market stalls. Very versatile fish that works for most cooking techniques but I like it best barbecued over a beach bonfire, with plenty of dried fennel stalks underneath to add a hint of aniseed.
Tell you what, Jim makes a great addition to the channel John, I can only imagine his neighbour's mouths must be permanently watering with the aroma that comes out from the open windows...

In the US there are lots of folks who are really picky when it comes to a fish’s bloodline. John Dory would be their ideal dream fish! Unfortunately, we don’t have John Dories on this side of the Atlantic 😢. Anyways, great job with the channel! Amazing video as always ❤️

- Jim is a professional chef and has been all his life. He was ( and still occasionally is ) personal chef for a local lord and his family. He is winding down his working now as he looks to retirement. 😊
