    Are you not remineralizing the RO water to any specific recipe?

      From my knowledge they don’t remineralize, just use the RO water with around 40 ppm. I have emailed them on the issue and that was the answer.

      Tap water in Copenhagen is extremely hard with a very high Calcium Bi-Carbonate content (around 500pm). So we actually filter the tap water through a Reverse-Osmosis water filter, and then use the straight Reverse Osmosis water for brewing which ends up around 30 ppm. We do not remineralize it with anything before brewing.
      We find this gives us the very clean, aromatic and complex cup that we are searching for.
      It's hard for me to say exactly what the 30ppm is made up of, as the water quality fluctuates greatly in Copenhagen. So my suggestion would be to use water around this 20 - 30 ppm range, which would consist of;
      No Chlorine
      Minimal Sodium
      Calcium 25%
      Magnesium 75%
