涼瓜黃豆豬骨湯
材料:
泰國涼瓜一條
紅蘿蔔一個
黃豆20克
豬骨腩一斤
腐竹2塊
薑3片
處理:
1. 黃豆,清水浸一小時。
2. 骨腩,打橫切一吋一舊,加入生粉2湯匙,加入少許清水,輕手揸出污漬,清水沖洗乾淨。
3. 骨腩,加入粗鹽一茶匙,乸10分鐘。
4. 涼瓜,打直一開二,去籽,打橫切一舊舊。
5. 黃豆已浸了一小時,清水沖洗乾淨,擎乾水。
6. 排骨已醃了10分鐘,清水沖洗乾淨,擎乾水。
7. 煲滾清水2升。
烹調:
1. 白鑊,放排骨,同時加入薑片,大火煎香。
2. 加入黃豆,炒香。
3. 加入紅蘿蔔,炒勻。
4. 加入大滾水2升,冚蓋,大火滾起。
5. 轉中火,冚蓋,滾30分鐘。
6. 轉大火,加入涼瓜,大火滾起。
7. 加入腐竹,冚蓋,大火滾起,轉中慢火,滾20分鐘。
8. 完成,可享用。

Ingredients:
Bitter melon 1 log
Carrot 1 No.
Soybean 20g
Pork belly 1 catty
Beancurd 2 pcs
Ginger 3 slices
Preparation:
1. Soybean, soak in tap water for an hour.
2. The belly, cut in 1" per each horizontally. Add in 2 tbsp of tapioca starch and little water. Squeeze the dirts. Rinse thoroughly.
3. The belly, add in 1 tsp of cooking salt, season for 10 minutes.
4. The melon, divide it into 2 shares vertically. Remove seeds. Cut in pieces horizontally.
5. Soybean has been soaked for an hour, rinse thoroughly. Drain.
6. The pork has been seasoned for an hour, rinse thoroughly. Drain.
7. Heat up 2L of water at high flame.
Steps:
1. Plain wok, put the pork, add in the ginger in the wok at the same time. Fry well at high flame.
2. Add in the soybean, fry well.
3. Add in the carrot, fry well.
4. Add in 2L of boiled-up water. Cover up the wok. Heat up at high flame.
5. Turn to medium flame. Cover up the wok and boil for 30 minutes.
6. Turn to high flame. Add in the melon, heat up at high flame.
7. Add in beancurd, cover up the wok. Heat up at high flame. Turn to medium-low flame and boil for 20 minutes.
8. Complete. Serve.
