I love this channel. I'm from LI and my father is 100% Italian, but my mother is Irish and English. So while there was plenty of Italian food in the house, because my mother is an adventurous cook and we live on LI, it wasn't exactly like Nonna made if you feel me. Watching this channel (and a few others) I have learned all the tips and tricks that elevates Italian food and shared it with my family. Now when I visit home, my mother and I cook together and she learns something from me! It's a great bonding experience that has made me feel closer to my family. No better feeling than when I made a bolognese for the first time and my father said it reminded him of Sundays when he was a kid.
Memories of my dad. He used to make something like this for his lunch. Sometimes fried, sometimes cold. But I'd have something too and just pause and maybe talk a bit. RIP Dad. Thanks, Stephen for reminding me of some good times.

For anyone without weights, you can make a v shaped cut to keep the meat from ballooning as it cooks. That's what your diner does for Taylor Ham.
You expressed beautifully the nostalgia one can have for a dish that might not have won any awards but which you hold close to your heart. My late aunt was not a great cook, but she used to fry Hebrew National salami in the pan with a splash of olive oil, get them crispy, and then pour three beaten eggs into the pan and watch them get fluffy. It was the best scrambled eggs and salami I’ve ever had, and I still think about them all the time.

This was a classic growing up in my Italian American household.

My best friend in school in the 4th grade lived up the block. Her mom made the best grilled cheese in a cast iron skillet. I’m 44 now & that always remains with me 💛. I will be trying this. Thank you 😊

My thing in Jersey from the morning food truck was Taylor Ham, egg, and cheese, butter, salt, pepper and ketchup. But this is something special and different. Thanks for this one, and I have Taylor Ham and also Genoa Salami in the fridge or freezer.

And easy solution to avoid the salami from “cupping” and to have it lay flat is to cut slits on edges of the salami. It’s a little trick I learned from frying baloney back in the day. 🍳🐷👨🏽🍳😊
I learned that from watching Taylor Ham fried sandwich videos, haven't made one yet lol, but soon.
I think he was aiming for cuppage to make them more conducive to stacking.

My dad taught me to make a fried salami grilled cheese when i was young and have always loved them. I will randomly get a craving and there is no fighting it lol. Personally I always loved them with just the classic gooey nostalgic yellow American, but this looks fantastic too! Looks like I'm picking up Salami on the way home.

This sandwich is my childhood. My dad would always have Genoa salami and American cheese in the house and I’d make it on weekends. I can always go for this sandwich, breakfast lunch dinner or snack

I had a friend in the 6th grade and one day she invited me to go home with her - we stopped by the ladies' underwear/nighgown factory near our school to say hi to her mom and then we went home to her Nana, who was making fried zucchini blossoms which were something that I'd never had before. Ever. They were amazing. The next memory was of my Dad, who would cook for us sometimes - again, he was not always home but when he was, there was all sorts of magic at the stove. the one I remember most is his way of making burgers, which involved shaking a good amount of kosher salt into a heavy frying pan and while that was heating up, he'd finely chop an onion and mix it in with pepper and chopped beef, make patties and then fry them up in the now red-hot frying pan. I have never had a burger that tasted like that one, EVER - and he'd always serve them on toasted kosher rye.
Fried salami is under rated.
I used to make this as well. didn't learn from anyone. just seemed like a tasty idea
We have this classic where I live. It's basically a fried mortadella and cheese sandwich. The thing is: it's an OBSCENE amount of mortadella. We build like 5~10 slices of mortadella, then a few slices of cheese in the middle, and then 5~10 more slices on the top. Fry everything and when the cheese is melted and the mortadella super fried, put it inside a very crispy baguette. It's crazy good, but you can die at anytime eating it lol.

That looks amazing, I'm gonna make one ASAP To your point about food bringing people together, I was an unusually athletic white boy in a a mixed area and most of the guys on the football and basketball teams on which I played were from poor areas. I remember 8-10 kids piling in our station wagon back in the day and my Mom would drive them home after practice every day. We were decently well off for the area and my Dad made an adjustable basketball goal and they'd walk for miles to come play all day from sunup until sundown.
Around lunchtime, my Mom would make a bunch of hotdogs and peanut butter and jelly sandwiches and we'd all chow down. It wasn't until years later after high school that I ran into some of them and they told me that my Mom and our family saved their lives and that they were eating ketchup on bread at home. Three of them ended up playing D1 basketball and one of them ended up making it to the show and played for the Pirates and Blue Jays for awhile.

Oh man, these days because I’m old, I’d chop those grilled salami slices up. That way the salami doesn’t get eaten in the first bite because it wants to stay one slice lol. Thus guaranteeing salami and cheese in every bite.
I like to do a similar sandwich. Bakery by me has a really good cheese bread that I like to use and toast both sides. Then fried salami, back bacon, mustard, American cheese slices. Lately I've been shaving some parm in there, or doing a fried parm crust on the outside. Oh man, I'm gonna go make one now.
I would like to see more recepies like that, there are to many over compicated recepies. They look good and taste deliciouses but sometimes u want some easy idea for a meal, so u dont have to wonder where to find some products.

Toasties!… Albertan here, who’s neighbour is Irish. She pumps us full Irish coffees and toasties (open faced cheese melts, usually tomato, or whatever the fridge has..lol. So I hang with her family and neighbours.. she serves everyone. Usually happens around 2 or 4 am

Ohhh hahaha honey, I’ve been making fried bologna sandwiches since I could reach the stove. Lol. Shoot this tho this looks mighty tasty. I’d do half the amount of cheese and use sourdough all day long. For some reason anytime I’ve tried the ol’ mayonnaise in replace of butter it turns out tasting like rancid oil and ruins the entire thing. So I’ll also be going for butter instead. Seems like a great trade off in calories too lol. Thanks for sharing and reminding us of the simple recipe we all have up our sleeves

I literally just did this before watching. Lightly fried the salami and rendered it's fat.
Then REHEATED a smokey thin sliced chicken breast in that salami fat.
Layered them with provolone cheese on grilled bread.
When I make bolognese, I use toasted salami instead of guanciole, it's about 1/4 the price.
This reminds me of a fried baloni sandwich. I've got some Hungarian salami and white cheddar cheese, so I'll be using that to try this.
