OMG. I use to live in Mangilao when I was in UOG. I worked at restaurant in Ladera Towers (don't know if it's still there) back in the late 90's - early 2000. Guam is awesome.
We dont put alot of water in the coconut. We just put little and we squeeze the natural juice out of the shredded coconuts. Otherwise the juice is watery and not milky.

Awesome clip. For years I couldn't figure out what gave this dish that bit of zing. It's the lemon!! My favorite version is with pink salmon.
