    My paternal grandma who lived in a ranch in Jalisco would make tacos with cheese and honey and cinnamon tea with a splash of milk. All fresh homemade ingredients. I thought it was the most delicious food I’d every eaten.
    If you’ve met tasted a corn tortilla with fresh cheese and honey you don’t know what you’re missing. Yummy!

    Talk about taking you back to your childhood; fifty years ago as a young boy living in Santa Fe NM we used to visit my Grandmother who lived in Pecos. There was a little old lady there who made a similar cheese using goat milk, it was the best cheese I ever had!!! I never knew it could be so simple to make, I'm definitely going to give this a try... Thank you so much for sharing your amazing videos!!...

    Since the queso fresco is very fresh, it’s likely to spoil quickly unless there’s enough people to use it. I only cook for one, so I would cut the recipe in half. Thanks a bunch @SimplyMamaCooks 😎😋♥️💃🏼

      @@joebarker8323 I've put my cheese wrapped in a paper towel in a tupperware and changed the paper towel and tupperware twice per day and had it last over a week. If it smells sour and/or becomes slimey, don't eat it. But I've gone through a gallon of milks worth a (few) spoon each swap in that amount of time. You're going to have more problems keeping people from eating it honestly.

    my parents are from a very small small small pueblito in méxico. they talk about their childhood a lot there, and of course a long with that they speak a lot about food. after they migrated to the united states and had me and my sister, we grew up eating this in the mornings. so delicious. Of course mom and dad would explain to us that that was the only thing they would sometimes be able to eat in méxico, calling it “comida de pobrecitos”. but i hated the negative connotation that applied to food like this, and im reminded it of it whenever i go to visit family in méxico, they’re appalled that i love this food because i’m an american citizen, but this food here, its home. it’s childhood and memories that i learned from my parents and grandparents, that they were so generous enough to share with me and my sister. it’s love, pure and simple.

    I was wondering how long this cheese lasts in the fridge, and/or if it freezes well? Thanks for all the great recipes, I can't wait to try this one!

      You can pretty much freeze cheese. I’ve done it with queso fresco. It’s perfectly fine for 3 months in a air tight freeze bag. Just break it into pieces so you don’t have to defrost the whole cheese.
      As for the fridgegtion, if you don’t throw away the whey and use it to store your cheese in a container ( the liquid that she threw away in the video) , it can last 7 to 10 days. Just make sure it’s place at the very back of the fridge ( b/c it’s colder) and always do a smell test and check the color for red or black molds.

    This looks delicious and wonderful! Thank you for the video! I wanted to get some but am trying to avoid going out. This is the perfect thing to make. I just use store bought tortillas cuz it is too hot to stand over a comal! Just FYI: I've seen a program from Italy where they use the whey to make ricotta! So nothing goes to waste.

    If you add lemon zest and some herbs to the cheese once set up you can make lemon ravioli or add anything with it my mum is greek and adds mint and make a thicker pasta dough for greek ravioli 😋

    You NEVER disappoint!!! Have you ever saved whey for baking breads, I've made flour tortillas with it, biscuits and of course waffles and pancakes. Ohh when I was a teenager I would hang out with a friend at her Tia's house. Tia would use it for fermenting fruit yeahhhh I didn't know what she was doing at the time.. HONESTLY I didn't lol. there's so many things to do with whey. Sometimes when I have some I need to get rid of I'd put a cup of whey in my fruit liquados, it's a good source of vitamins, proteins and minerals plus I lose weight in the weeks I have whey in my diet. It helps me digest my food better when I have some in my morning smoothies 🙏🏼 I have intestinal malrotation so I have to stay regular.
    Whey helped me with weight loss and for my son was always so skinny,bien bien FLACITO. I read whey could also help with healthy weight gain, so I shared my smoothies and added peanut butter to it he started looking GREAT. But yeah my tortillas with whey liquid was savory and a bit tangy but it paired well with spicy picadillo .

    i followed a queso fresco recipe from tik tok and it said to use apple cider vinegar. it was horrible, i had to throw it all away! i’m so excited to try this, i trust your recipes 100%.

    I do the recipe for Queso Fresco and after I let it drain completely, I placed it in my food processor, salt it and processed it until it is smooth...well...as smooth as Queso can get. Then I added heavy cream one tablespoon at a time as it was processing until it was very smooth like Philly Cream Cheese but not thin. We prefer it to be thick and have a solid consistency. There is nothing better than fresh, homemade Queso Fresco and/or homemade cream cheese.

    You steamed your tortillas in an insulated basket. Rick Bayless says this part is important in making authentic corn tortillas.
