    CHHENA PODA
    Preparation time 10 minutes
    Cooking time is 50 minutes in the pressure cooker or 200° C for 1 hour in the oven
    Serving 2-4
    Ingredients
    (For Chhena )
    2 ltr Milk , दूध
    1 - 2 Lemon juice, नींबू का रस / 2 tbsp vinegar in 1/2 cup water
    (For Mixture)
    ½ cup Sugar, चीनी
    1 tsp Green cardamom powder, हरी इलायची पाउडर
    8-10 Cashewnut, chopped, काजू
    5-6 Almonds, chopped, बादाम
    6-8 Pistachios, blanched, chopped, पिस्ता
    2 tsp Semolina, रवा
    A pinch of baking soda, बेकिंग सोडा
    ½ tp Oil, तेल
    1 tbsp Remaining chenna water, छेना का पानी
    A pinch of salt, नमक
    (For Baking)
    1 cup Salt, नमक
    pressure cooker , cake tin
    Other Ingredients
    Sal leaves, साल के पत्ते (Optional)
    Process
    In a large sauce pot, add milk and bring it to boil.
    Add lime juice. Keep on stirring and you will see the milk getting curdled.
    Onces the milk gets curdled, pour the curdled milk into a bowl lined with a thin cotton napkin or muslin cloth.
    Gently squeeze out the remaining whey from it. Keep the remaining whey for further use.
    In a parat or bowl, add the prepared chenna crumble and mash slightly, making sure the texture is uniform.
    Add sugar, green cardamom powder and mix well until the sugar melts completely.
    Add all dry fruits, semolina and mix it well.
    In a small bowl mix oil and baking soda together, transfer it into a parat and mix it well.
    Add little remaining whey water and prepare a smooth cake batter consistency.
    Preheat the oven at 200° C.
    Grease a cake mould with oil. Place the sal leaves into the cake mould.
    Pour the chenna poda mixture into the mould and tap twice. Cover the mould with a lid.
    Bake in the preheated oven for 1 hour or 50 minutes in the pressure cooker.
    Bake chena poda till the top crust gets a dark golden color.
    Remove from the oven once done.
    Then check with a bamboo skewer or toothpick and it should be clean. There should be no sticky batter on the toothpick.
    Let the chenna poda cool completely in the pan. Then remove it.
    Cut into pieces. Transfer into a serving plate and serve.

      It's absolutely wrong information bro....I m also from nayagarh (oldtown)..56 bhog(dishes)of Lord jagannath does not include chenapoda....it includes podapitha( that is totally different).. chenapoda is invented in nayagarh in the year 1948 by sudarshan sahu and bidyadhar sahoo ( who is a confectioner )then it is known in the state odisha and beyond....you can Google it ....

    As an BAGHUA🐯 NAYAGARHIA it makes us proud when he was talking about the real story of the man(Mr. Sudarshan Sahu ) who literally invented THE CHHENAPODA. Thanks a lot Chef Ranveer ji, just because of you now the whole world came to know about the real story of CHHENAPODA. But I would like to tell a brutal truth about it that, it really hurts a lot when people pronounce it as CHHENAPODA' ( छेना - पोड़ा ) , because we the people of Odisha call it छेना पोड-अ it pronounce like 'अ ' at the end not " आ" . Because CHHENAPODA is not just a sweet for us it's an emotion♥️ for all the Odia. JAY JAGANNATH 🙏.

    Yes, Ranveer you are correct, it is a very tasty sweet of Odisha and its was initially famous as 'Nayagarh Chhena poda', the Pahala things came much later....when we travelled from Bhubaneswar to Bolangir in western Odisha, Nayagarh bus stop came on the way and we must enjoy some Chhena poda there wth a take home parcel packet for the family and friends...such was the attraction of chhena poda in our time in the seventies...thanks you so much for covering this in your channel.

    Chenna Poda is the Dark Knight of sweets. Dark and crispy on the outside, soft and juicy from the inside. I am drooling just thinking about it. Personally, the "Poda" part (the crisp exterior) is my favorite. As a kid, I used to go to the sweet shop with my dad and always demanded the piece which had more "poda" in it. Thanks chef for the nostalgic trip down memory lane. Please keep posting more Odia delicacies. It would be an honor to learn the tips and techniques of our own food from you.

    This one will always be close to my heart. I'm not from Nayagarh, but being an Odia, Chhenapoda is an emotion.
    Traditionally there were no ovens or moulds in Odisha to begin with. So they were made in covered earthen vessels, packeted with sal (or banana, if sal isn't available) leaves and placed on fire, which when I come to think about is an authentic oven!
    I'm actually impressed by the facts you mentioned. ❤️

    Also... When you replace sugar with jaggery, the Chhenapoda (ଛେନାପୋଡ଼ / छेनपोड़ॉ) tastes even better, and also gets a beautiful colour.
    And the place is 'Pahala' (ପାହାଳ / पाहाल़ॅ).

      @@saheelataslim717 I m from Bhubaneswar, Odisha. Pahala is near by me only. Agree the essence is not same but still u can satisfy your tastebuds. Even arround 100 kms away from Bhubaneswar a place called Langeleswar ... Must try chennapodo and ChennaGaja. Both are super delicious.. taste is kinda different from Pahala.

    The best Cheena Poda in whole of Odisha is Nayagarh one as it is the original one. It just melts within your mouth. Such a delicacy !

In my village one famous sweet shop called "Babaji Sahoo Chhenapoda who is making using Angaar inside deep chulla, sala leafs, chhena from desi cow milk and trust me no body can beat it;s taste...
