We always used Minute Rice. Love them.

Been looking for this recipe a long time...I have the recipe box but the one for this was missing...my mother used it over and over.

I was so disappointed for you, but I’m so happy you were able to salvage the dish! They look delicious! 😀

Try using Minute Rice instead of regular rice. I used Minute Jasmine rice and they turned out great. I also made them on the stove top instead of the oven. I very much like the flavor after pre-browning the meatballs gave the dish. Thank you so much for sharing this one.

Good Job! Never let the food win, as Chef John would say.

These were called porcupine meatballs at our house. I haven’t had them since I was a kid. I definitely need to make these!

A delightful video as always! I wanted to let you know that when I made the recipe as directed, my rice still was a bit al dente, which I actually liked because it gave it some texture but it might answer your question that even if you did the recipe right, the rice would still not be 100% cooked. I also loved the flavour and the ease of the recipe. It's a winning dish in my opinion on many levels. Glad you agreed!!

Ugh touching raw meat is always such big thing! 😂 I gotta hype myself up for it too hahaha! That’s interesting that you had issues with the rice, I have a Mexican meatball recipe (that I haven’t made in years and don’t remember the exact recipe 😂) that adds raw rice to the raw meat and it all cooks together 🤔 I’ll have to look that up 😂 Ooh I see now that there was water that was supposed to go in the meat 😂 maybe that had something to do with it haha. But these sound awesome! 🙌 That fix at the end sounds great too!
