This video gave me so much inspiration! You asked about our favorite weekday dinners and I have a few go-to pastas that are easy and so delicious. One is just whatever pasta and vegetables I have in the fridge such as broccoli, carrots, mushrooms, spinach/kale and onions which I saute then add lentils or vegan sausage/ground to the pan and then a jar of pasta sauce to heat it up. The thing that makes this dish taste amazing is adding cashew cream to the veggie and tomato sauce before combining it with the pasta. Soooo good! My other favorite weekly pasta is to jazz up boxed vegan mac and cheez by adding sauteed veggies (usually cruciferous), along with peas, corn, and vegan sausage or white beans. Since I'm adding extra ingredients, there isn't enough sauce that comes with the box so I add in extra creamy sauce made from cashew cream and usually some tofu that I blend together with nutritional yeast and a little lemon juice, onion powder, and salt. Both dishes are really balanced and really tasty and make good leftovers.
I love these Week Of series because you give so many great ideas and the video isnât super duper long. Thanks for all of your hard work. My go to meal of late has been steamed broccoli and zucchini over greens with udon noodles on top!
Mo go-to meals are jazzed up tofu scramble - with all sorts of veg and I use a bit of justegg in there for texture. And soup/stew situation happens at least twice a week - can be simple or wild, a 10min miso soup or a 1hr chili.

Also chickpea egg sandwich with chickpea flour, nutritional yeast, Beyond Meat Breakfast Sausage, Vegan Cheddar, in an English Muffin or Bagel. My favorite meal atm is flammkĂŒchen, originally not even close to vegan but I use it as like a pizza, I put homemade arugula pesto on it, some vegan beefstrips with taco seasoning, a bit of onion, and after its baked a garlicsauce and some arugula with it....could seriously eat it every day LOL

These look delicious but still a lot of work for a weeknight meal when everything is crazy with the exception of the baguette pizza. My family used to make pizza out of literally anything growing up when we were in a hurry to eat and our fridge was getting empty. Bagels, tortillas, sliced bread, pitas... anything that was a solid arrangement of carbs can be made into a pizza if you want it enough lol People might find this weird, but I promise it's good: peanut butter and jelly "tacos." You just take a flour tortilla, dress it up, and fold it like a quesadilla. For smaller kids you can cut them into strips or triangles for less mess. We ate so many on the 100+ roadtrips we used to have to take to visit family. It's super portable since you can shove a thousand of them into a ziploc and surprisingly mess free. They're also good for picnics, sporting events, and amusement park trips since they're so calorically dense for their size. Toss in some veggies and hummus, and you have the easiest meal ever that's also not terrible for you

I make an eggplant burger that is really good I found the recipe on The Farms website. I don't know if that restaurant is still around.
