Roasted Carrot Dip (Easy and Tasty, PERFECT FOR SNACKING)

ROASTED CARROT DIP
This simple Roasted Carrot Dip contains just a handful of ingredients but is packed with so much delicious flavour.
It makes snacking less sinful!
400g carrots, peeled and cut into batons
1/2 medium size white onion, sliced
2 cloves garlic, sliced
1 star anise, broken
1/2 teaspoon red chilli flakes
1/4 teaspoon coriander powder
1/5 teaspoon cinnamon powder
2 teaspoon brown sugar
2 teaspoon apple cider vinegar
1 tablespoon olive oil
salt
Toss all the ingredients in a bowl and transfer to a roasting tray.
Cover loosely with tin foil and roast in a preheated oven at 180 C / 350 F for 1 hour or till the carrots cook and get caramelised.
3 tablespoon creme fraiche
1 tablespoon dill leaves
Place the roasted carrots, creme fraiche and dill leaves in a food processor and blitz to form a coarse paste.
Transfer to a bowl and serve garnished with black sesame seeds, dill leaves and a drizzle of olive oil.
