    We've overdone it. No pun intended. This isn't just your average how to remove the membrane from pork ribs video, this is a how to remove everything from the entire pig video. Our local FFA needed some pork for a fundraiser, so we supplied these pork halves and deboned them so that making pulled pork would be a breeze after they came off the smoker.

    Index:
    2:02 - Start deboning along the inner pork loin and the pork ribs, then cut along (but not all the way through) each rib bone
    5:37 - Moving down to the H bone and the ball joint at the femur on the ham
    6:39 - Back to the spine and cutting all along the back of the pork ribs. Slowly work the bone off of the meat
    7:52 - Remove the femur out of the ham starting with the tip of your Razormax knife
    9:11 - To remove the pork shoulder, we'll remove the shank bone off of the foreshank and then blade bone
    11:39 - Seasoning the pork half with Bearded Butcher Blend Original Seasoning
    12:32 - Start rolling the pork half
    12:54 - Tie the half with 24 ply butcher twine

    I watch all your videos & your knife skills are insane. Most of your videos you use Victorinox knives. I actually went a bought a set they are insanely sharp.     I think I once saw in a video a specialty tool that looks like a loop knife to be used for deboning ribs. Great video. It's good you're using basic tools as well. Who said porchetta only comes from Italy? 😉 LOL.

    Excellent job gentlemen! Few will do as you did with the intercostal muscle, some VERY tasty meat! You ought to consider doing an entire hog, pretty simple though you do take down the hams and use to stuff when you do your roll!

    Super interesting, I've never seen it done like that before. I just returned from a CWD state and am wondering if that would work for deer. When coming from a CWD area back to a non CWD state, you can't bring back any bone at all, it all has to be boned out and left behind to prevent the spread of disease. The problem is that after traditional quartering and boning, when you get home a few days later you have a bunch of trim waste. The less cuts you make the less waste and this seems to be a possible option.

      My entire life, I could never think of any reason to visit Ohio (or Indiana, birthplace of the KKK), but that is not important now. I won't, but now I have a reason.     This looks like a super cool idea for my son's graduation party. I'd use your seasoning blend inside but I think I'd also stuff it with tropical fruit, pineapple, mango, citrus, etc, before tying. Saw that at a pig roast I went to. I'm going to see our butcher tomorrow. I'll ask him about it. Maybe he'll let me help. I'm assuming your Black blend is available in the bucket by now, yes?
