I am plant based but now also need to be gluten free, I’ve been fighting MS with food for years and it saved my life!!!! I’m very happy I found your channel I noticed in your kale and apple salad. It said 56 g of carbohydrates. I also have to watch out for carbohydrates. It’s really hard for me being plant-based and to get all the nutrition that I need and not have too many carbs I know quinoa has 45 g carbs in it, I’m grateful for your channel! God bless ❤

This looks absolutely delicious. Call it raw if you wish but to me hours in the dehydrator is cooking the food in a way that concentrates the flavors. Yum Yum

I made this yesterday and it was really good! I do wonder if it would have been that different just to put the sauce on during the first dehydration of the meatloaf and save time. It was very good though!

I just found you and your dishes look amazing! We’re about to go from vegan to start incorporating raw. Well my husband doesn’t quite know yet but he wants nothing but vegan food out of our kitchen and eats anything in that realm I put in front of him (as long as I disguise certain veggies :). I’m excited! We try to be sos free. Could you make the veggies without the oil or would it not work?

Hey I’ve been conducting quite a few experiments with raw food myself- you should try dried UNRIPE jackfruit as a meat replacement. It browns up from the oxidation and because it’s unripe it isn’t nearly as sweet as the typical canned jackfruit. Haven’t been able to pick up a bag yet because I just moved but you should look into it.

Raw unripe jackfruit wouldn’t really be edible raw. I would be really surprised unless it was dehydrated over night but even then just add a small piece on the side to try. Jackfruit is really high in natural latex so it is better if it’s broken down by slow cooking. If someone is sensitive to latex they could have problems breathing after eating it. If you live in a tropical place it is a great idea to plant some trees and the fruits get as big as watermelon. The insides are like glue and it is really hard to get off your hands unless you have covered them in oil or gloves to handle. It’s a great fruit because one can feed about 10 people and the trees can have hundreds as long as there is enough water. It would be a great survival food.
Is there something I can substitute the oil for in the kale salad recipe? I don’t eat oil.

I am exploring the raw vegan lifestyle. I do not have a dehydrator machine. However, I do have an air fryer with a dehydrator feature. Can I use my air fryer or must I purchase a dehydrator?

@ 12:09. could we very lightly oil the bowl before putting the sauce in it so it will dehydrate without sticking? Or is it better not? Will that affect the sauce? For the herbs, could we use dehydrated herbs? If yes, in which proportion? This looks absolutely delicious, I want to do it for xmas... thank you ❣
I use a (flat) silicone sheet to dehydrate sauces on my trays. Just be careful that you don't pile up too much of the liquid initially that it starts seeping off the edges after a while.

What kind of cutting board is that?
The dehydrating makes things more professional but the pate’s can just be eaten raw on a romaine leaf or collard leaf. But I would not do that with mushrooms. I got really sick on mushrooms once so as far as I’m concerned dehydrating after being tossed with sesame oil and tamari is the way to go. I’d much rather eat the red pepper raw on the top in kind of a pineapple or apricot chutney. I love the crunchiness. I would also add chia seeds to either the loaf or the chutney for extra protein and adhesiveness.

This looks amazing, but I can’t eat peppers. They give me horrible indigestion. Is there anything that works well as a substitute? I miss out on lots of delicious recipes because of peppers. ☹️

Cheap doesn't work, save up for an Excalibur you won't be disappointed.

Not sure about cheap dehydrators as I've not used any or heard of any good ones to recommend.
Good value processors - Cuisinart for sure.
So this is a 3 day process?
No you want to dehydrate the sauce at the same time as the loaf which makes that a 12 hour process. Then you need 3 hours for the mushrooms & peppers at the start, and 3 hours for the final dehydration. So it could be done in one afternoon, overnight and the next morning.
This could make good herb dehydrated crackers as well?
For sure. You'd probably want to add a little flax and water to bind everything a bit better for crackers.
