  • Custard Buns are a Chinese snack that is sweet and aromatic, and children especially like to eat them. This time, I used the primary fermentation method to make the dough. Compared to the secondary fermentation method, the primary fermentation method eliminates the step of exhausting the dough after the first fermentation, eliminating much of the hard work of kneading the dough and making a smooth crust with a higher success rate.
    1. Dough ingredients:
    All purpose flour 300g
    Water 170g
    Oil 20g
    yeast 4g
    Sugar 5g
    2. Custard filling ingredients (15 pieces)
    2 eggs
    Milk 100g
    Sugar 50g
    Unsalted butter 40g
    Salt 1g
    cake flour 30g (can be replaced by medium gluten flour)
    Milk powder 30g
    3. Production Note
    Once the buns are wrapped, let them rise for 30 minutes, then steam them over cold water, turn to medium heat for 12 minutes after the water is boiling. Simmer for 10 minutes before removing the lid.
